How to cook Delicious egusi soup like Nigerian tomato stew:
My Stewy egusi soup recipe. Cooked like Nigerian tomato stew because we start it off like we are making tomato stew before introducing the egusi into the cooking pot.
served with boiled rice, plantain, yam and even swallow fufu. I served my family this soup with hot eba. Stewy egusi soup is very easy to make. If you can make Nigerian tomato stew, then you can very well cook this yummy stewy egusi soup.
I call it stewy egusi because first of all I cook my tomatoes, enough tomatoes to make a pot of Nigerian tomato stews, then it is converted into egusi soup by adding Nigerian soup ingredients like crayfish and dried fish.
After I added the crayfish and dried fish to boiling tomatoes, the ground egusi is added and cooked into a pot of so much deliciousness. Even if you don’t like egusi soups, you’ll love this because it’s not like the usual egusi soup we make, it’s really stewy. My tomato loving girls don’t like eating swallows but they surprised me yesterday with the way the they ate so much even going for more soup servings.

INGREDIENTS FOR STEWY EGUSI SOUP:
Ground egusi
Fresh tomatoes
Fresh peppers
A handful shred Lettuce ( I used lettuce because the canceled Nigerian elections left markets closed and the only green vegetable at home is lettuce. You can use green amaranth instead or any green vegetable of choice. The lettuce sprinkle in there still tasted great anyways).
Beef
Kpomo (Cow skin) Optional)
Thyme
Dried catfish
A handful ground crayfish
Seasoning cubes
Salt to taste
Palm oil
Onion
Stock from boiling the beef.
MY STEWY EGUSI SOUP RECIPE:
- Cook blended tomatoes, pepper, thyme, seasoning cube and onion in hot palm oil till it boils.
- Check for salt, add the crayfish and deboned dried fish. Let them cook for about three minutes.
- Add the beef stock, let it boil before adding your egusi.
- Now Add the ground egusi and bring back to a quick boil. Cover to let egusi boil well and cook. You can add the cooked beef now and stir.
- Check for taste and thickness. Adjust if salt is needed. Adjust with some water if soup is too thick.
- Finally, sprinkle in the green vegetables and turn off the heat.
- Stir and serve.
