Chicken Soup With Spaghetti Ready For Consumption Like I always say, Dear Diary, serving spaghetti, rice or even macaroni with tomato stew all the time, can become boring. With a little variation of soups, it gets exciting and fun to eat.

INGREDIENTS FOR COOKING CHICKEN SOUP:
- Chicken
- A few pieces of leafy vegetable (hot leaf or washed bitter leaf)
- Seasoning
- A scoop of tomato stew or tomato paste
- Red Pepper
- Salt
- Curry
- Water
COOKING STEPS FOR CHICKEN SOUP:
- I placed the washed and salted soft chicken in a hot fry pan. *No oil added.* The dry pan roasted and toughened the chicken a bit without frying it. The oil that came out of the chicken was enough to brown it. For hard chicken, there is no need for roasting in a dry pan. Just cook after washing.

The chicken is turned over from time to time so it doesn’t get burnt. There are times the oil in the chicken is not enough and you have to drop just 2 or three drops of oil to the sides of the pan. Turn over, only when one side is brown and kind of hardened a little bit.
- A dessert spoon scoop of already cooked tomato stew or paste is added to some boiling water, with salt, curry and seasoning to taste. The mixture is allowed to boil for about 3 minutes before putting in the pan roasted chicken and hot leaf (uziza) or washed bitter leaf. (Here I used washed bitter leaf). For this soup, I used stew with the little stock that gathered at the bottom of the pan. The soup is covered and the heat greatly reduced to let it simmer and bring out the chicken taste into the soup.
- Let the chicken simmer for as long as it is not falling off. Do not leave the pot unsupervised as the soft chicken may just begin to get too soft and fall apart.
- When the pot simmered for about 7 minutes, I tasted, was satisfied with the softness and how juicy it looked, so, I turned off the heat and served.
For slim spaghetti, it cooks in five minutes. Once it is poured into boiling water, it starts getting soft immediately. To avoid eating sticky spaghetti, I passed it through cold water as it washes the sticky starch off. This chicken soup did not require many ingredients at all.
I can serve this soup with boiled rice.
NOTE: Roast chicken in an old pan to avoid scratching your fry pan when scrubbing or trying to turn over the chicken.
