Recipe for a simple fondant
Hi Aunty Eya, how are you? Here is my simple fondant recipe.When I did the post on Red Velvet Cake, some people asked about the decoration. I Kept forgetting to take pictures. Well, here it is but I can’t

post on everything at once so I’ll start with making the fondant and covering the cake.

 

Ingredients for cake fondant


For 1 kg of Icing Sugar,
a. 60ml (4 tablespoons) of water
b. 20 ml (4 teaspoons/1 sachet) of gelatin
c. 125 ml of Liquid glucose
d. 15 ml (1 table spoon) of glycerin
e. 1 kg (2¼ pounds) of Icing sugar
F. Cornflour, Crisco or Vegetable oil for rolling.

 

Procedure:

1. Put the water into a small bowl and sprinkle the gelatin in and leave to soak until spongy. Put the bowl into a saucepan with hot water. (Not boiling water). Use a spoon to stir the gelatin until it dissolves well. Add the liquid glucose and glycerin. Continue to stir till they are well mixed and the the content is runny.
Tip: The liquid glucose is very thick and sticky and can be difficult to remove from the container. To make things easy, use a hot metal spoon to scoop it. You can warm the spoon up by placing it in the water in the sauce pan.
 
2. Shift the Icing Sugar into a large bowl. Make a well in the center and slowly pour in the liquid ingredients. Mix well.

Tip on storing fondant : Use a very large bowl so that you’ll have enough space for the mixing. Also, if you are using more than 1 kg of Icing sugar, it’s best to do it in batches of 1 kg each. (Except you want to use that opportunity to deal with christian mother arms…lol)

 
3 Turn the mixture onto a clean surface and continue kneading until smooth. If the paste is too sticky add more sugar; too strong? add a little (LITTLE) water or crisco. U can use the paste immediately or tightly wrapped and stored in a plastic bag until required.
Tip: Well stored fondant can last for weeks. However I prefer using immediately. Pls dnt buy Suzan Icing sugar. I no wan spoil market for them but the last time I wanted to decorate, I did not see the normal one I buy so I was told to try Suzan Icing Sugar.
Ah! I was vexed! It was just too somehow…I can’t explain it but I had to knead for more than 30 mins with plenty crisco before the whole thing came together . And I bake in the middle of the night so I was so tired and angry!
 
4. Rub some crisco or vegetable oil on ur work table. You can use cornflour or Icing sugar instead but for me oil works better for covering and flour works better for the modelling paste(i.e the one used to make shapes and flowers) Also rub on the rolling pin.
Use your eyes to measure the size of your cake, noting the the diameter of the top and length of the sides. (I hope u get my point.

‘m sure there are more professional ways of doing it but I learnt it on my own so…) Gently roll out your fondant making sure everything is equal in thickness and it is wide enough to cover your cake at once. Make sure the cake is very close to you. Gently life the fondant and cover the cake with it. Also, gently smoothen any roughness or bulging.
 

Tips: It’s probably better to have someone help you lift the fondant. Try and cover your cake with butter icing first. Add flavour and milk to the butter icing, this helps the cake taste better too. Make it smooth and leave it to dry before covering with fondant. This helps to hold all the crumbs intact so that it doesn’t stain your fondant. If you are not sure if your eyes got the size of ur cake well, take the pan you used in baking the cake, place it over the fondant. Measure the length of the cake and add to the circumference of the pan. Then roll again. (I hope I explained this better cos there are no pictures).

 
We got this recipe from “The Contemporary Cake Decorating Bible” by Lindy Smith. I bought it on Amazon. Then, also bought The Wilton Cake Decorating Student Kit. It has a lot of items you’ll need for basic cake decorating. Pls invest in books, tools and online information. Even if you won’t bake for others, at least, you can bake for yourself and family. Just make out time and start with decorating cupcakes, cookies and small cakes.

  4. But whr I stay here, Susan is the in thg oh; infact u r advised against odr types of icing sugar.Except Miller's for butter/royal icing. Bt wc odr type of icing sugar do we av dt u can recommend? I don't know more dn Susan and Miller's ooo.
    Have you ever tried adding a lil CMC to your fondant mixture? It makes it come out very nice and elastic.

  6. Cool..glad you tried it! Yes, they have a special glycerin for fondant. It's sold at Baking shops. It's also in the oix above. That one that looks like water in a transparent bottle…

  7. Yeah.., in the market, they were so full of praises for it. I dunno…for fondant it was too thick and took a longer time to come together. I use Ezbon cos I hardly see Millers here.

    How is CMC used? I sometimes add gum tragacnth when I am not in a hurry. I wud really love to know how CMC is used. I see but neever gave it mcuh thought. Awaiting ur response too 🙂 🙂

  8. Well, I go thru a friend who has an account with them and has a particular shipping company he uses. Truth is, I'm not sure of the details. I just copy the links and send to my hub who forwards it to the guy. We then pay him either in Dollars or the Naira value.

    But mehn..,if you are not careful, you'll buy till you have no money left. Online shopping is addictive!

  12. You're welcome dear. A lady in my church saw one of my cakes and asked me how much I'll use to teach her. I told her, I'll teach her for free. If you see the way she started rejoicing eh..,she almost knelt down for me! I mean, she is in my church and will likely take some of my customers by the time she learns, but I dnt mind. Who God has blessed, is blessed.

    Me, I dnt believe in hoarding information. That's what is killing we Nigerians. Go on the internet and see a million and one fondant and cake recipes..

  13. I'll try and do a post on gum paste. That shud be next. I have never used stencils although I have a book on it.

    What do you mean by double tier cake? Do you mean two steps? Or one cake with two layers?

    For layering, just check online, I have seen so many posts on it before.

  16. I use Susan a lot oh and is very good; once u get all ur measurements right; I mean, water, glucose, gelatine and glycerine.

    For CMC, u only need to add very little qty to d fondant(like adding a pinch of salt), then knead together; it makes moulding very easy and it doesn't allow ur fondant to crack, it gives a kind of elastic nature(don't really know how to xplain now buh trust u get me sha).

    I asked u a questn earlier on concerng d coverg on d red velvelt cake dt u did; I asked whther those thingx u put on top were kind of ready made dt u jst bpught and put or u made them?

  17. I forgot to add, CMC+Water is d best form of gum that can ever be used while decorating; it sticks jst like gum; add roses, bows, flowers et al; voila and u can be sure of d neatness as well. Just hearing of water for d first time tho'.

  18. I doubt if they send stuffs to Nigeria though! Best bet is getting someone in the uk to help! Cos they do have certain locations they don't post to! Africa is one! Its quit difficult! My friend relocated back home and his eBay acct can't be used in Nigeria! Very annoying!

  19. Startg up is very ezy: jst get d basic materials; scale, measuring cups n spoons(N500), food coloring, baking powder, rolling pin, baking tin and et al.

    This is d basic recipe for cake
    Flour – Ikg
    Butter – 1kg (Topper is d best; usually it comes in a large 10kg pail bt they sell it in bits)
    Sugar – 600g (depending on how sweet u want it; this can be reduced bt ds is d standard)
    Eggs – 16 or 15 medium sized eggs
    Baking powder – 4tbs
    Preservative – 4tbs
    Flavouring – to taste
    Food coloring (optional) u can add to give it color like pink cake or yellow etc.
    NB: You can reduce d above let say by half e.g. flour 500g meaning odr ingredients will be reduced by half, if 250g, u reduce by 4. Because 1kg flour will produce like 12-13inches of round cake and u might not want up to that.

    If u have mixer cream ur butter n sugar until pale in color n very fluffy, add egg one by one, dn sieve flour, baking powder n preservative separately, add bit by bit to d creamed mixture. coloring n flavour can then be added. U r good to bake.
    For decoration, follow Adaihsy measurement, there u have it

  20. Hi Ahdaisy, God bless for this recipe. I have tried some of your recipes and they turned out really well. For those of you interested in shopping or paying for stuff on Amazon, they are shipping companies that ship to Nigeria. And yes Amazon is sooooooo addictive. I conveniently pay for stuff there using my First Bank Mastercard. At some point I had to fill a concession form telling my bank the maximum I wanted to spend daily online. Then I also have this visagold account with first bank. All you need to open it is a hundred dollars. The account operates only in dollars, so it makes it easier to pay for stuff online. The disadvantage of the shipping company is they don't ship some stuff. So what I do is send the things to my brother-in-law's address in the US, then when I am done with a particular bout of shopping, he ships them for me.

  21. @ Ahdaisy making fondant with CMC is almost same procedure. The CMC make ur fondant elastic and its preferable to Glycerine cos of our weather.

    To make fondant using CMC
    Icing sugar 2kg
    Water. 1/2 cup
    Gelatin. 1 tablespoon
    Liquid Glucos 1 cup
    CMC. 1 tablespoon

    Method
    Sieve icing sugar into a bowl, add CMC. Measure your water in a bowl add gelatin. Bring to boil in a dutch oven add the glucose until it's completely dissolved.
    Add the gelatin/glucose mixture to some of the icing sugar and turn with a wooden spoon and gradually add more icing sugar until it forms a dough, turn it on your work surface and knead adding the rest of the icing sugar.
