Making plantain with fried brown beans

This brown beans porridge is cooked with vegetable oil, not palm oil. The color may not be red like your normal palm oil beans, but I guarantee you that this is sure going to be your favorite. It is nothing like the ordinary beans you have always forced yourself to swallow.
I can eat this with white rice, yam, and even boiled unripe plantain. I can eat just the beans alone and I’m good.  If you do
not like this consistency, you can make yours thicker by cooking with less water. I love to take a spoon and just eat the soupy beans after clearing my dodo.
 

INGREDIENTS FOR COOKING MY DODO PLANTAIN WITH BROWN BEANS

  • Ripe Plantain
  • Brown beans
  • Ground crayfish
  • Soya oil
  • Ground Red Fresh Peppers
  • Chopped Onions
  • Seasoning cubes
  • Salt
  • Water

STEPS TO COOKING:

  1. I had to fry the ripe plantain first because I needed to use some of that sweet oil for the beans. I cook beans with palm oil, Soya oil is used only when I want a different flavor and color.
  2. The  picked beans is  washed before boiling. I boiled until tender before adding some salt.
  3. The onions and crayfish are fried in shallow oil before adding the pepper and seasoning cubes.
  4. I checked for salt before gradually  adding the boiled beans. The pot is covered and brought to a boil.
  5. I wanted the beans really soft, so, allowed the pot to cook until the beans was very soft before turning off the heat and serving.

This method of cooking beans never fails. This is the method I use to cook for haters of beans especially kids. It tastes so different from the usual beans and dodo that we know.
The fried crayfish adds a special aroma to it. I am not a great fan of beans, but when it is boiled and then fried this way, I bet I can eat it everyday ‘cos it’s so different.

Serious aunty Ojay last thursday I bought some riped plantain with d intention of cooking a porridge,but my Yoruba friend suggested dis,I was reluctant initially,but at d end I must confess I enjoyed it,fried plantain,red oil stew and beans. But I was confused when I saw fried brown beans on ur update,is dat a new method?looolz

  3. No, not new. It is just another method of cooking beans. I know about six methods including the one you did, and they all taste nice and different too. Next time try this one for a change. You will have no left over.

    Can I substitute Soya Oil with regular vegetable oil? Would it still taste good? I can't stand the smell of soya oil.

  8. Aunty Eya,I am one of ur secret readers o. I found ur blog sometime last month and it has been a blessing. I am making this fried beans today but I'll add some carrots ,green beans and green leaves(my husband loves vegetables so I add them to almost everything). I made ur indomie with chicken gravy yesterday and my husband said 'if u eat this type of indomie,u won't want to eat any other type'. Lol. I've made ur Vegetable rolls too and it was great. Plus I've learnt a lot here. Like how u make and store ur stew,pepper sauce etc. I will make ur Sharwama for breakfast on saturday. Best blog ever
