Ripe Plantain and yam porridge

I made the yam and ripe plantain porridge. I was worried that I might not like the taste but it’s yummy. My selective taste buds accepted this combo. The kids also love it. It never occurred to me that we can cook yam and ripe plantain together until I saw the pot of porridge today on SYTYCC posted by Ify Fentus kitchen.

When I scrolled down to read comments and perhaps find the recipe. She commented that it’s the same way Nigerian yam porridge is cooked and that was all I needed. Made it the exact same way we cook Nigerian yam porridge but waited for the yam to boil very well before adding my ripe plantains.

We cut the pieces of yam smaller and left some plantains uncut with some just cut in halves to enable me to find them easily when the porridge is done.

Ripe plantain and yam porridge is easy to make and one good meal for kids. They love the sweetness of the ripe plantain. I thought that this sweetness will penetrate into my yam cubes because I love sweet yam but it didn’t and that helped those that don’t like sweetened yam.

 

Below is my easy recipe for tasty plantain and yam porridge.

INGREDIENTS:

Yam

ripe plantain (The quantity of yam is more than the plantain)

Pepper

Palm oil

Tomatoes

Onion

Dried catfish

Seasoning cubes

Salt

Green vegetables

Water

STEPS TO COOK RIPE PLANTAIN AND YAM PORRIDGE

  1. We stir fried the tomatoes, pepper, onion, seasoning cubes and dried catfish in oil till a bit dry and fragrant.
  2. We added the yam and water at the same time. Water to the level of the yam but didn’t cover the yam.
  3. Covered the pot till the yam boiled really well, checked, stirred gently before adding the ripe plantains and some salt to taste before covering the pot again.
  4. We continued to check for taste and stir while the food cooks. Once it began to cook and soften, the porridge began to thicken. There was no need for mashing. I didn’t want the ripe plantains crushed at all.
  5. Delicious ripe Plantain and yam porridge cooks and thickens to satisfaction. We check that the taste is ok before adding the green vegetables.
  6. Once the green vegetables are added to porridge, stir check and turn off the heat.
  7. Served with dried catfish stew we made to enjoy with rice but changed our minds.

If you like unripe plantain porridge. it’s easy to make too.
