HOW TO COOK RED BEANS AND RICE belle full
INGREDIENTS:
2 Cups red beans
2 cups boiled rice
4 medium sized tomatoes
2 large tatasheys (red bell pepper)
A handful curry leaves (Optional)
1 cup shredded chicken
1 large onion
Salt to taste
2 seasoning cubes
11/2 cups soya oil
Water
DIRECTION
Cooking steps for rice and beans belle full
1. Soak beans overnight, rinse and boil till soft. Mash the cooked beans if you like. I didn’t. Roast or stir fry the chicken with a pinch of salt and onion and set aside.
2. Wash, chop and stir fry vegetables with seasoning cubes. Add the roast chicken and stir. Check for salt and set aside. If you like your rice and beans thick and dry, then mash the cooked beans before adding other ingredients. I like mine a bit soupy, so, I did not mash.
3. Add to the cooked beans and stir. Beans should be watery, not dry.
4. Add the almost cooked boiled rice, stir and check for taste. Cover and leave to simmer till the rice is completely cooked and soft. Sprinkle in the curry leaves if yo like them, stir. Turn off heat and leave to cool a bit before serving.
