There are two Nigerian meat pie recipes on this post
was baked with a non stick heavy baking pan. The second post below baked with an aluminium baking pan… the ones sold in our Nigerian open markets. Scroll down to see the second meat pie recipe:
NOTE: Without minced meat, you can boil your beef with a little salt and onion. Then blend and use.
MEAT PIE RECIPE ONE:
This recipe produced about 8 meat pies, just enough to fit in the round cake baking pan.
FOR THE DOUGH, YOU NEED…
2 and 1/2 cups all purpose flour
125g butter or (1/2 sachet Nigerian baking margarine)
1 teaspoon baking powder
A pinch of salt
1 raw egg for dough
1 raw egg for brushing (egg wash)
About 70 ml water to start with, if dough gets too soft, sprinkle in some flour. Too hard? add a little water while mixing, lol. You can avoid adding too much water by starting with gradual drops while you mix.
Ingredients for the meat pie filling:
2 Medium sized carrots
2 Medium sized Irish potatoes
1 Medium sized red onion
2 Teaspoons dried thyme
1 Seasoning cube
Salt to taste
350 grams minced meat
1/4 Cup soya oil (vegetable oil).
BEFORE YOU MAKE NIGERIAN MEAT PIE, YOU NEED TO…
Wash, peel and dice the irish potatoes and carrots, dice the onion too and set aside.
FILLING MAKING DIRECTION:
1. In a clean pot, add the minced meat and diced onion with some salt. Crush the meat down, cover, lower the heat and leave to boil until meat changes from red to brown
2. Add the carrots, oil, thyme, seasoning cube and irish potatoes, stir, check for salt and cover to boil for about 3 minutes. Check and if there’s no juice from the meat, you can add about 1/3 cup of water or less.
3. Dilute a tablespoon of baking flour in water to form a light paste. Add gradually to pot while stirring and stop when you see it beginning to thicken. Cover and leave to boil briefly. Check for taste and thickness and turn off the heat.

Place clean stones on the bottom of the pot you want to use (I used a heavy base pot).
Preheat for about 10 minutes or more depending on the hot strength of your cooker.

Nigerian meat pie is usually baked in an oven, but can also easily be baked on a stove top using a baking pan and cooking pot. This meat pie turned out as good as the ones I baked in an oven.
What the meat pie needs to bake is just the heat whether in an oven or stove top. The process of making the batter and scooping in the meat and vegetable is the same (as shown on the step by step meat pie making pictures below) The only thing I did differently here is heat a cooking pot with sand in it for about 40 minutes. Cover with foil to prevent sand entering your food.
Grease a baking pan, sprinkle flour in it, arranged the meat pies neatly and place in the heated pot. You can also cover the baking pan inside with foil (I didn’t).
When the meat pie is cooked in about 40 minutes, I flip and leave for about 5 more minutes (This depends om how hot your stove/cooker is). For my cooker, I remove from heat after flipping and waiting 5 minutes. My delicious meat pie is ready.

INGREDIENTS FOR NIGERIAN MEAT PIE WITHOUT OVEN:
- Use 5 cups plain flour ( 1kg is about 8 cups)
- 2 sachets baking margarine (500g) I don’t have butter today.
- 2 teaspoons baking powder, If you using self raising flour, then do not add baking powder
- 1/2 a teaspoon salt.
- About 300 ml water to start with, if dough gets too soft, you can sprinkle more flour, if after exhausting this water, dough is still too hard, add some more water in small quantities while mixing.
