My porridge brown beans recipe. Dear Diary, This dish of Porridge Beans was cooked with lots of chili ( fresh pepper)
A lot of Palm Oil and crayfish too. It can be eaten with boiled rice, boiled plantain, fried ripe plantain, Boiled potatoes, garri, boiled yam or just eaten as a beans meal.
INGREDIENTS FOR PORRIDGE BROWN BEANS
2 cups Beans
2 smoked medium sized catfish
1 cup Palm Oil
Salt to taste
2 Seasoning cubes
1 teaspoon ground pepper
Water
The beans is picked ( dirt and stones removed). It is then washed and put on the fire with some water. The pot of beans is allowed to boil for a while before palm oil is added. The Palm oil is added this early to enable it cook and mix well with the beans. I check continually to ensure that it starts getting tender before adding other ingredients ( salt can make the beans take a longer time to cook.
The fish is washed and added to the boiling pot, with the pepper, seasoning and salt. The pot is covered and allowed to cook. The salt and seasoning are added to taste o, not too much. When the beans is cooked, it becomes tender. At this time the cooker needs to be turned off else the beans gets over-cooked, the skin falls off and the beans seeds break. I do not really enjoy eating broken beans. Lol!
