How to cook Nigerian plantain pottage also known as plantain porridge
Plantain pottage cooked Nigerian, this way is the yummiest, helps one lose weight, Controls sugar levels and very rich in vitamins. I wanted variety for my plantain but never imagined the equation will be so balanced and well blended.
Whoever thought that plantain will turn out this good with sauteed vegetables. Because of the veggies, didn’t add locust beans. Cooked the porridge or is it pottage?
Cooked plantain until done before stirring in my sauteed vegetables and serving. This can be cooked with unripe or fairly ripe plantains. More pics when you continue…
Cooking Procedure: Plantain pottage with assorted vegetables
First I cooked my plantain like this plantain recipe, except that I didn’t add locust beans because I am going to add assorted veggies here.
While plantain cooked, I chopped and diced my vegetables, greased the fry pan with a little vegetable oil and added the vegetables with some seasoning cubes for taste.
I stirred and allowed to saute until onion becomes translucent and vegetables taste good not raw. Then added the already cooked vegetables to my already cooked pot of plantain pottage, stirred and served.
We did not cook the pottage together with the vegetables, else they’ll overcook and taste bad too. The chicken too was grilled separately and served with the pottage. The chicken wasn’t cooked together with the pottage. This meal turned out really tasty.
You can cook your normal Nigerian plantain porridge the way you love it, then saute vegetables in a fry pan and add to already cooked food.
INGREDIENTS FOR THE STIR FRIED VEGETABLES:
2 seasoning cubes
I medium sized green pepper
2 medium sized tatashey
2 large washed and scraped carrots
I medium sized onion
1 table spoonful vegetable oil to grease the pan for stir frying
INGREDIENTS FOR THE PLANTAIN POTTAGE
5 small fingers of plantain
2 tablespoonfuls palm oil
2 medium sized catfish
5 glasses of water or more depending on how thick you want the pottage
1 teaspoon ground fresh pepper(ata rodo) sauce. You can use any pepper of choice
seasoning cubes
salt
Half a kilo of chicken grilled separately and served with the pottage.

@Amaka,if these were leafy vegetables like ugu or hot leaf, even I would have added direct. adding these vegetables straight into the pottage might overcook them, you won't like it. The taste and flavour too might have that green pepper raw veggies flavour you won't enjoy. When tatashey, green pepper and others are sautéed with enough onion and some seasoning, the taste is better.That's when it's good to add to already cooked meals.

This is the recipe I used to cook the pottage, without the locust beans sha. Follow the link below. When cooking was done, then I added the sauteed carrots, green pepper, onion, seasoning etc into the cooked pot.

Your blog is amazing with great recipes but it's difficult to follow the recipes because they are not detailed. Did you add palm oil to it?
Sorry anon, I just added detailed explanation now. Yes I cooked with palm oil but sauteed vegetables in a little vegetable oil.
