RECIPE FOR OKPA MOI MOI:
3 cups okpa flour (Shop measuring cups and measuring spoons)
1 tablespoon ground pepper
salt to taste
2 seasoning cubes (I think I used one cube, not sure now)
Water
COOKING DIRECTION:
1. Mix the flour with a little water to form a paste.
2. Add palm oil until you get desired colour, then add the pepper salt and seasoning.
3. Mix the paste very well before adding hot water and mixing until it becomes runny (Lighter than beans moi moi else the cooked okpa will be dry and hard).
4. Check for salt and taste
5. Tie in santana bags and drop in a pot of boiling water. Let the water be much, enough to cook the okpa for one hour.
6. Serve with pap, fish, soaked garri or just enjoy with nothing.
