Nigerian tomato Stew With Scent Leaves

How to make  Nigerian tomato Stew With Scent Leaves. Add preserved tomato in hot oil. This tomato was blended with  onion, tatashe, pepper, garlic and ginger before storing in the freezer.

COOKING METHOD:

Fry your normal Nigerian tomato stew
 Add seasoning cubes and a little curry to stew
Add tender beef and a little stock to stew

 

Allow beef to boil and cook in tomato stew

 

 Add scent leaves to cooked stew for flavour  and nutrients
Add scent leaf vegetables sparingly

Stir and allow green vegetables for about 30 seconds before removing from heat. If oil is much, scoop out some before serving the stew.


To be able to chew soft beef. I cut into flat pieces before cooking. That way I’m sure it’s cooked right inside. I stopped liking beef when I chew or bite into a fat piece and get that raw beef smell and taste in my throat. I hardly eat beef outside cos the meat sizes are big.

why I cook meats really done before eating


One reason I like take-away food is because I get to put my meat or chicken in the oven/ microwave again before eating. My family knows me for microwaving bought cooked meat, fish or chicken. The truth is, when I’m done reheating or microwaving, everyone wants mine. 


Well, I don’t know if there are people like me or is something wrong with me? I find it difficult eating meats not cooked by me unless I have to take home and dry or roast again. Meat lovers don’t care, so long it’s meat, they just enjoy themselves.


You see, The way suya is cut (flat pieces) is how I sometimes cut my beef to cook at home. It cooks so fast that if I’m not careful, everything starts falling apart. I like the way people enjoy meat and I think I’m missing something. My children too, many times they clear their food without touching meat. Is that OK? Are there kids like that? 

While dishing food, they come to whisper that you don’t put meat on their plates. My seven year old is always announcing that she is “cutting down on meat” when I haven’t really seen her eat meat the way children do.

This early announcement is to help prevent whoever is dishing her food from adding meat.

Are there people like me who struggle to wash or eat meat? Please let me know I’m not alone.

    And please buy nice new pots, this is supposed to be an international blog, presentation and packaging are very important. Watch some cooking shows and learn.

  6. anty eya < i noticed u dnt always gv ur meat enof spicin. just salt n onions is nt enof fr d meat, evrythn nw is agric n organic, dey v lost their original natural flavor. so ps try spicin wit ginger, garlic, knorr n d likes. ur kids ll enjoy it beta. u cld also try chiken wings, nuggets, fish fillets, stake . however, sm kids tend to be a bit vegetarian, nothn to worry abt. let them get their protein source frm egg, milk, beans etc. hope dis helps

  10. As anonymous above said,you should season your meat properly,with not just onion,but also,ginger,thyme,curry and bullion cube ,with salt. Allow all these to boil & mix well,for at least 5 mins,before adding water. This allows the seasoning to enter inside the meat well,giving the meat a great taste. If you do this,I promise you,your kids will be asking for more meat! Experience from tasting a lot of other people's food,has shown me that not a lot of people know how to boil meat. I'm extremely proud of your blog. Please keep up the great work & keep being the real you. This is what sets you apart from others & makes your blog,so alluring!!!

  17. dnt use ugu or amaranth ke. Y na. U dnt like it or wat? These two vegetables give stew a very wonderful taste. So dnt say it shldnt be used. Try it and see. I call it vegetable stew. Somethin my hubby asks for wen he's bored with d usual thing.

  19. Aunty Eya very nice stew. I didn't kno st leaf can b added to stew. Like few people already said perhaps u shld try seasoning ur meat with spices so the meat tastes better(not too much tho). The tomatoe stew is not enough to have that well spiced meat.
    Don't worry ur kids don't like meat just ensure they get protein from different types of food. One of my kids also doesn't eat fish or chicken (maybe bcoz the colour is white) but he loves beef and goat meat while my daugther goes for any kind of meat or fish on her plate 1st b4 she eats d food n ALWAYS asks for more meat.

  23. You know times are changing, i grew up loving meat and still do, but in this part of the world most kids dnt really like meat. Aunty Eya, ur kids probably have it all that is why they do the less meat thing, you probably give them snacks and other substitutes which they do like. It is not strange, its their generation ( Ajebutters) 🙂

  25. So una plenty wey dey chop meat? I thought with the talk on red meat and its effect to the body, people would either reduce its consumption or avoid it totally.

    Aunty Eya, please I hope you ONLY use ceramic plates in your microwave? Please avoid the use of plastics when microwaving.

    Also, ensure the food is covered so as to prevent the waves from having direct contact with the food(health consciousness).

  27. Omo sEe meat o! Aunty eya only u?! Chai.I never knew scent leaves could be used for tomato stew, I usually use it to cook ofe akwu, porridge yam or beans. Will try it ds weekend. Ehen, aunty eya, ugu can be used for tomato stew and it tastes so yummy. Am still looking for d tips on dat cuz I can't wait to make it.

  28. Yes Ivy Brown you are right. This my seven year old used to be the meat eater in the house before she stopped and started saying that she is cutting down on meat. She used to rush for her meat before food sef. All the meat eating just stopped.

  30. I've never tried it cos I felt ugu and tomatoes won't taste good together.
    I cooked green amaranth with diced tomatoes, fish and eggs before and it was yummy. We didn't use it with rice though, it was served with boiled yam.

    What I know my children can never have enough is SNAILS. They love snails.

  37. Hi aunt Eya, can you please give specifics on the on the ratio of pepper used? I hear that the end product of stew is highly dependent on this. eg 3 tomatoes, 1 tatashe and 1 medium sized onion. This will be truly appreciated.

  38. The only thing I will agree with is that there was definitely too much oil in the pot. The pots are fine, these are the same pots used throughout much of the world. The pots are perfectly clean with no stains in them, what would the need be to change them?

    The blog is accessible by anybody who has access to the internet, but this is not a professional cooking show blog. This is simply an everyday mother and wife who is sharing her world with those who care to see. This is reality, not make believe! It is ok to offer advice but the manner in which you made your statement was offensive. Kudos to Eya for being such a polite and well-mannered person to respond to you in such a calm and easy manner.
