How to make my Nigerian snail sauce
Snail sauce is great for those who want to lose weight, diabetics, and for the whole family. Great for those avoiding red meat. Snails are here now and it’s not just peppered snails that can be served. They can be used for snail stew and other Nigerian/African recipes.
This sauce goes with boiled rice but can also be served as a light meal
INGREDIENTS FOR NIGERIAN SNAIL SAUCE
10 medium-sized snails
A handful of shred cabbage
1 medium-sized onion
3 medium-sized red peppers (Ata Rodo)
1/2 cup oil to stir fry
1 teaspoon curry
Salt to taste
2 seasoning cubes
1 tablespoonful baking flour to thicken
1 small green pepper
4 cups water to start with, you can adjust to the desired thickness.
Before you make this snail sauce, first
clean the snails to remove slime.
Chop the onion, cabbage, and red peppers, stir fry briefly with 1 seasoning cube, set aside
Mix the flour with water to form a paste and set aside.
DIRECTION FOR MAKING NIGERIAN SNAIL SAUCE
- First, boil the water with salt and only add the clean snails when water boils.
- Cover and leave snails to boil and harden for about 3 to 5 minutes. That makes the snails very crunchy.
- Add the stir-fried vegetables, remaining seasoning cube, curry, check for salt.
- Add the flour paste, stir to thicken for about a minute, check for salt and thickness. If too thick for you, add a little water, if too watery you can sprinkle in some flour while stirring briskly.
- Finally, remove the seeds from the green pepper, shred and add, immediately turn off the heat. Stir to mix very well and serve hot snail sauce with your boiled rice or drink as hot soup for the cold weather.
