This Nigerian cake recipe is not the first posted here. There are many cakes here posted by me and others sent in by blog readers. Nigerian cakes are not light, they are a bit dense and not at all juicy, not too sweet. Just well balanced the way we love our cakes. Nigerian cakes may not do well if we try to eat them with fork.
This is an easy recipe that baked really fast perhaps because I used two shallow baking pans for just 3 cups of flour. This recipe requires the use of self raising flour. We don’t have one at home right now but there is a recipe on this blog for how to make your own self rising flour at home. Going by that recipe, a little baking powder and tiny bit of salt added (according to measurements) will automatically turn all purpose flour to self rising flour. INGREDIENTS:
3 cups all purpose flour
1 cup milk powder
1/2 teaspoon baking powder
1/4 teaspoon salt
6 eggs
1 heaped cup of sugar
250 grams butter or one sachet Naija baking margarine (250 g sachet)
1 teaspoon combination of strawberry, banana and vanilla essences.
BAKING PROCEDURE FOR NIGERIAN CAKE RECIPE (3)
- Sieve the flour, milk powder, salt, baking powder into a bowl
- Beat the sugar and butter till pale and a bit light.
- Whisk in the eggs one after the other until everything is well combined
- With a wooden spoon, gently roll in the flour and stop once it’s combined.
- Pour in a greased baking pan and bake in a preheated oven (180 degrees) till brown or till skewer inserted in the middle of cake, comes out clean.
- Bring out of the oven and let in sit in the pan for about 10 minutes before removing from pan.
- Place on a rack to cool completely. Then, cut and enjoy with ;loved ones.
For my type of no setting old school oven, just preheat for about 15 to 20 minutes before baking your cake.
