My weight loss journey day 8 the Nigerian way. This is week two of my Nigerian Natural weight loss journey happening naturally.
My weight dropped again and it’s a beautiful feeling (See it below). Today is Sunday, March 11, 2018, and I did not exercise. I said earlier that Sundays are for rest from workouts. I think my muscles
need to relax every weekend even though I know that the workouts are not rigorous at all.
BRUNCH:
My first meal of the day was eaten at noon AGAIN. Boiled rice with peppered vegetable sauce and an egg. An hour later, I snacked on three garden eggs (Eggplants).
I cleared the plate.
For dinner at 4pm, it was roasted fairly ripe plantain with roasted groundnuts, avocado pear and one boiled egg.
INGREDIENTS FOR PEPPERED VEGETABLE SAUCE:
1 cup shredded chicken
One medium-sized onion
1/2 cup soya oil
1 cup shredded carrots
One spring onion
1 seasoning cube (Stock cube)
Salt to taste
1 cup water or more if needed
4 tablespoons pepper sauce (About 10 scotch bonnet peppers)
2 teaspoons baking flour
1 cup shredded cabbage
COOKING PROCEDURE:
- Heat the oil in a pan till hot, add the onion, pepper and seasoning cube. Stir for about 30 seconds.
- Add the washed shredded chicken and spring onion, stir and leave for about 2 minutes
- Add the cabbage, carrots, water and check for salt. Add if needed.
- Mix the flour with water into a light paste in a bowl and add to cooking, stir very well, leave for about 20 seconds, check if it’s thick enough, check for taste.
- Remove from heat and serve. This is very very spicy, I mean real HOT. You can use more fresh pepper cause the hotness makes it taste even better.
