Nigerian Spaghetti Bolognese served with the sauce on top
I just wanted to send this in as an Easter Special recipe.
Remember when I said
I Googled the hell out of spaghetti Bolognese? Yeah, I finally came up with a recipe that will work for the normal Nigerian. The basic ingredients for the real Bolognese sauce is a lot of meat, Tomatoes, Spices and Parmesan Cheese. I skipped the cheese and brought out all the spices I have hope that one of them will contain the ‘oregano’ I kept seeing in all the recipes.
I’m sorry that there is no specific measurements or timing, I ‘used eye’ to measure them.

To make your ground meat yourself.
Cut the meat into cubes and put in the freezer for about 30 minutes or just enough for the sides of the meat to harden. Separate the meat cubes so that they don’t freeze together.

When it is ready, put in your meat grinder (I used the one in my food processor), you can add some pepper and seasoning into the meat and continue grinding. And there you have it, your own homemade ground meat with ingredients you are sure of.

Ingredients for my Nigerian Spaghetti Bolognese-ish |
Ingredients:
3 cups Olive oil or vegetable oil
1 medium Onion
1 clove Garlic
1kg Ground beef (You need a lot but I used little cos I am cutting down on my beef intake)
3 cups Chopped Fresh tomatoes (I had blended ones so I used it like that)
1 can Tomato paste (tin tomato)
2 teaspoons Curry
1 teaspoon Thyme
1 teaspoon Nutmeg
1 Bay leaf (little)
A handful scent leaves (little)
2 cups Carrots (diced)
Beef stock (I had chicken stock so I used it like that)
2 Knorr cubes (or any other one)
1 teaspoon fresh Pepper
Salt to taste
1 pack Spaghetti
Heat oil in a saucepan |
Saute onions and garlic until soft |
Add ground beef and stir to brown |
Add ground beef, tomatoes, spices, seasoning and stock, AND wine for those who cook with wine. Plus carrots and water |
Procedure:
1. Heat oil in a saucepan. Saute the onions and garlic until soft and a little charred.
2. Add the ground beef and stir till continually to break it up and brown it.
3. Add
tomatoes, spices, seasonings and stock. For those who cook with wine, add your favorite red or white wine.
4. Add salt to taste and continue stirring so that it won’t burn. Don’t get carried away by the aroma…lol
5. Add carrots and water. Cover and allow to simmer until it becomes thick and the tomatoes don’t taste sour anymore. It might not completely lose the sour taste but just make sure it is ok, not ‘slapping’
6. When it is ready, remove from fire and keep aside.
7. Boil spaghetti in salted water. I prefer boiling it whole. it is easier to eat when the strands are not broken. If your pot is too small for that, put the spaghetti in boiling water and after some seconds gently push it in as the part in water softens.
8. When it is soft enough, drain the water and toss with some butter or olive oil. ( I skipped that part)
To serve, you can serve the ‘white’ spaghetti with the sauce on top, or at the side. Like this |
Or, you can pour the spaghetti into the sauce or the other way round and mix. Like this |

Just as I LOVE lasagne…
Mine is NOT complete wifout CHEESE baby.
Parmesan, Mozerella, goat cheese, even chedar..u name it..
Once its shredded, its good 4 me…
And proper 'mince beef'..
Ready made ones can b bought at shoprite (I bliv iv seen it in der freezer b4)..
Dats ofcos if u as lazy as I am and like d easy way out…lol
I use any basic red or white wine (a must)..
Nothn fancy…
Don't know wr 2 find celery thou.

Ahdaisy next time, make sure the spaghetti is Al dente. It looks very soft. Yeah. Mince meat is what is used.

Thanks for this recipe ahdaisy,I prepared this today been monday. And my husband was going on abt how he wouldn't eat cos he's eaten a lot from ystrday till 2day. And I didn't even answer him,he was busy drinking champagne with his friends when I finished cooking.. I just dished mine 2 eat and he was like,let him have a taste.. After which he demanded for his own portion,the friends demanded for there own portion and my pot of food is finish…
