Multi-Purpose Egusi Soup By Chubby ELLA.   This soup is multi purpose because it can be served with swallows like eba, pounded yam and even amala or with boiled rice and even boiled yam and plantain.

Ingredients needed

onions,
green pepper,
fresh pepper,
thyme and curry,
crayfish,
palm-oil,
salt,
egusi,
tomato,
stock-fish,
dryfish
 Maggi cubes. 

Cooking Steps for multi-purpose egusi soup

First, I boil my chicken, stock fish and dry fish together, well spiced cos it’s meat stock I use for the  soup.
Then, I heat my oil on fire.
poured in my onions and green pepper,allow it fry till it looks like

 it’s burning then I pour in my egusi,

I stir till the whole egusi is mixed with the oil then I add my parboiled tomato paste (keep stirring if not it will burn).

Next, I add my part of meat, stock-fish and fish with d stock.

I taste and add all other ingredients left. Crayfish, benny chicken and 2 cubes of  chicken seasoning.

Stir all the way to the bottom and leave to cook till the top is covered in oil then you can add your vegetable at the  last minute as usual.

  2. hmmmnnn, this soup sha..chicken and green pepper!!! how did u do ur tomato paste,dd u use vegetable oil in dat…cos i feel like with the palm oil that will be too much oil going on there.

  3. Nice one Ella. I learnt from an aunt that yellow, green n red peppers can be used in vegetable or egusi soup however I've always blended them up when I use them for soups and I've never been disappointed.

  7. Pls do n let us knw if u like it. One tip: dnt put all @ d same tym,share it in2 two places,put d 1st part wen u r fryin(if u r frying) den pour d oda part wen d food is ready jst b4 u turn off d gas. D aroma n taste is nyc.

  8. Yhh I use wooden spoons 2 cook bt dis particular soup was rily much n my wooden spoon was rily short,so I had 2 use smth else,besides dat spoon is ceramic,I dnt tink it spoils pots lyk metal spoons. N yes I rily love soups cos I love real food,I'm nt a junk person.

  9. No,I dint use veg.oil @ all,jst palm oil. 4 d tomato paste,I blended my tomato,yellow pepper n tatashe 2geda n boiled till dry.

  10. Blended watermelon wit d seeds(watermelon seeds r medicinal) bt nt d back,sieved 3-4tyms wit a tiny-holed sieve till dere were no particles anymore. Den refigerate.
