Here Is how I cook jollof rice and beans with carrots
Nigerian jollof rice and beans is very filling. It fills you up so much so that you just keep drinking water the whole day without feeling hungry.
It is very easy to cook and less expensive too. Every day is not christmas, this was cooked with only beef stock and crayfish, no meat or fish.
The chicken and fish in the pics were just brought from the fridge, heated and added to garnish for serving. There is This is how I cook jollof rice and beans with carrots

INGREDIENTS
2 CUPS RICE
3 CUPS BEANS
SOYA OIL
SEASONING CUBES
ONE MEDIUM SIZED ONION
3 MEDIUM SIZED CARROTS (optional)
PEPPER SAUCE
BEEF STOCK
SALT
WATER
Below is the direction for how to cook Nigerian jollof rice and beans
DIRECTION
Fry onion, tomato paste, crayfish, seasoning and pepper in hot oil before adding the beef, chicken or whatever stock. I added frozen stock here. The stock contains pepper so, very minimal pepper was used when frying

Add washed rice to boiling beans
Cubed carrots are added to cooked rice and beans, left to simmer for 10 minutes before turning off the heat. You can leave your carrots for as long as you want but don’t over cook. I am happy I didn’t skip the carrots cos while rice and beans were tender, the carrots added some crunchiness.

Chicken and fish were not part of the whole arrangement, these came in from the fridge just to get heated and be served t with the dish.
Carrots are stirred in and left to simmer and burnnn. Burn in is for you lover of dry jollof bottom pot. For me, I like to lick the sauce with my five fingers. You very free to let your pot do some burning’ after adding the carrots and some peas maybe.
Nigerian jollof rice and beans with some sauce. Rice can be cooked till pot is dry if that’s how you like it. In case no beef or chicken stock at home, cook with just water and much crayfish. I love them watery with some sauce. Enjoy our Nigerian jollof rice and beans with carrots

Look's delicious,hmm Aunty Eya u are a good cook, even after parboiling beans and rice it will still get burnt. Hw can one cook jellof rice with beans without getting it burn.
Roasted beef with jollo rice and beans? yummy. I neither parboil my beans nor rice. I wash and cook beans very very tender. Even this is not broken but very soft. I always feel like parboiling removes the protein. For rice, it's just laziness after all the rice is parboiled before loaded in sacks. The rice we buy is already parboiled na.
One more thing Able mom. After adding all the ingredients and rice, stirring and checking for salt, avoid any further stirring until your jollof is cooked.
Aunty Eya I love this and it reminds me of my childhood. It was more like palm oil rice and beans with broken pieces of makerel fish, very yummy. Now I coook just boiled rice n beans with fried fish stew. I will try this jellof rice n beans with palm oil. Thx for reminding of the good old days and what to cook soon.

@Able mum, the secret is low heat! After the food has boiled under high heat, just turn the heat down so it will cook gradually…

Shining teeth! @Able mom, Pinkyberry is very correct. Once the pot boils, continue cooking with low heat.
One more thing Able mom. After adding all the ingredients and rice, stirring and checking for salt, avoid any further stirring until your jollof is cooked.
I used to love it a lot too. Now, one of my girls has taken over. This is her favourite, she made us prepare this even after others kicked against.

I normally use broken rice. Which type of rice did you use for this dish. It looks so delicious.
