How To Roast Groundnut In A Fry Pan

 Roast groundnuts made the Nigerian way.
 Here are three simple methods of making Nigerian roasted groundnut/fried groundnut. Roast groundnuts are a great snack any day, for roast groundnut lovers, one week doesn’t go by without cravings for this delicious, nutritious snack.
They taste really great if done the proper way and well salted. Here in Nigeria, There are three methods of roasting or frying groundnut also known as peanuts. There may be other methods out there but here in Nigeria, these three methods are what groundnut sellers use.

The video shows me frying groundnut with even semolina. The reason I didn’t use sand to fry groundnuts there is because sand comes as a last resort for me when I fry groundnuts at home. Sand needs careful cleaning after frying to prevent some sands from hiding in the peanuts.

METHODS  TO FRY GROUNDNUTS

1. With Sand
2. Without sand (Using garri)
3. With table salt.
There is a third method that’s not widely used because most people do not like very salted groundnuts… Roasting with salt instead of sand or garri.

When I open a bottle of roasted peanuts to enjoy, from the first bite, I know what method was used because the difference is very obvious. Most groundnut sellers use the low-cost method to maximize profits thereby helping buyers grow appendicitis. Some use sand because they are not aware of other methods.
Whether you fry/roast groundnuts with one method or the other, the process of getting the final product to be crunchy is the same. The level of crunch depends on your washing procedure just before making them.

The process is the same until after drying. When you are done drying, then comes the decision to use the best method for roasting peanuts or use the cheap method that leaves buyers/ party-goers with sore teeth.

First, Let’s look at the Procedure for making peanuts, and for those who like to coat or make peanut burgers, you, first of all, have to let them pass through this process if you want crunchy groundnuts. Unless of course, you are buying already roasted peanuts in which case you start coating and frying.


Simple Procedure for making Crunchy Groundnuts

  1. Pick out stones from your fresh groundnuts, soak in hot (Boiling water) for a few minutes or till the water colour changes and the groundnuts look pale (Lighter).

Salt and spread out on a tray or mat to dry in the sun, oven or your preferred drying method. Dry until the wetness disappears.Roast in a pot or fry pan using your favourite method (Methods explained below)


The 3 methods of making roast groundnut (peanuts) are:

Below are the three methods, you decide which is best for you and go with it.

How to fry Nigerian groundnut in a frypan without using sand

To make roast groundnuts the Nigerian way, you need to put something in the cooking pot or frying pan used, under the peanuts to prevent them burning, if you really care about your health and teeth, and do not want to chew stones, do not use sand. If you do not want to be too cautious while chewing Nigerian roast groundnuts, do not use sand. Use a little quantity of garri instead.
  1. After drying the washed and salted groundnuts in the sun as explained above, place a fry pan on the stove,  let it heat up a little before you sprinkle some garri on it, then pour in your groundnuts and with a spatula or wooden spoon, start stirring and after about five minutes, get checking by removing some skins and chewing to see if it’s brown and done. I like mine roasted very brown almost to the point of burning, so I let it roast longer until I’m satisfied with the colour. Note that roast groundnut doesn’t get crunchy while still hot! you take it off the stove, with a colander or sieve, remove all the groundnuts from the garri and set aside to cool n a large serving tray. Once they start cooling, they start getting crunchy. 
  2. Store in airtight containers to retain the crunch.

How to roast groundnut using sand:

This is another method of making your Nigerian fried groundnuts… The process for washing and making crunchy is still the same as explained above.
  1. After washing, salting, and drying, place a frying pan on the stove, let it heat up a little before you sprinkle some clean dry sand in it. If the sand is wet, let it dry first before adding the peanuts. 
  2. Next, you pour in the peanuts and begin to stir with a wooden spoon or spatula until they begin to brown. The browning is as you like it. If you like very brown and roasted, then you stir longer checking occasionally. Once it browns to your taste, take the pan off the heat.
  3. Carefully separate the groundnut from the sand by picking them out or sieving. With sand you have to be very careful else you chew tiny stones in your finished product. The cleaning hs to be intense and gradual especially for sellers because dust and sand in roast groundnuts can drive away returning and potential customers.
  4. Let it cool and get crunchy before you remove the skin and store in airtight containers.

How to Roast Groundnut Using Salt

If you want to roast your groundnuts using salt instead of sand or garri, the process is the same. Just cover the bottom of the hot fry pan with table salt before pouring in the dried peanuts. Stir until brown and continue as already explained above.

NOTE: Whether you roast groundnut with garri, salt or sand, make sure you cook on low to medium heat so it doesn’t burn. How to fry groundnut with a frying pan is same as how to roast groundnut.

  1. Good afternoon ma'am, I just read through your article online and I was prompted by the fact that I just finished roasting a disastrous groundnut. After everybody at home had long expected this, I screwed it up. Though I tried it on few occasions about Some six months ago being the first time. I have seen my lapses from your recipe but I want to take it a step further. Please teach me how to coat the peanut. I will go and try another sample now and share my success story with you.   2. Good day Madam, what recipes can u use to fry groundnut to make tasty, like Suggar and any flavor to add., also if u are frying or roasting with salt can u also dry it with salt after heating with hot water, if u roast with salt hope the groundnut wouldn’t be salted.
