Ojojo with akara
It’s Rubynnia again and this time around, I want to show you how I prepared my Ojojo.
Ojojo is made from grated water yam. Water yam is ideal for this
delicacy because it draws after being grated unlike other yam species.
So I will explain in details, one step at a time.
STEP 1: PEELING; GRATING TIME I cut yam tuber into desired slices, peel the skin off and grate. For those who don’t like grating, I suggest you cut the yam slices into tiny pieces and blend with a blender to save you the stress of grating.
STEP 2: CONDIMENTS ADDITION I added chopped pepper and onions to spice my ojojo, not forgetting salt to taste.
STEP 3: FRYING For frying ojojo, you can either use your hand or spoon depending on your preference. I prefer using my hand since the pureed yam is sticky like dough for making puff puff.
STEP 4: ADJUSTMENT & TURNING Once the balls turn light yellow, do turn it over so the other side can cook.
STEP 5: SCOOPING, COOLING & DRAINING Remove the balls from
oil when it’s done. Ojojo soaks a lot of oil, so I would advise you press the balls to drain the excess oil, then leave to cool.
STEP 6: READY TO EAT! Ojojo can be eaten alone as snack, with garri(yam flakes), pap or with any food of your choice

Well done Ruby. I remember buying this loads at d roadside back in the days. It was fried yam (dundun), ojojo and akara with fried hot stew.
I've tried frying akara 2wice but I got mini pancakes instead. Hopefully my trial of ojojo will be better.

No be only you oh. Nowadays, I'm having cravings for fried foods; atleast I'm trying to increase my weight to a certain Kg. So I guess I'm okay.
To your itching question, I didn't feel any while grating. I think when one peels yam and it mistakenly touches the skin, it itches but when I was grating, it didn't itch.

Yes water yam is extremely itchy. And it's more slimy so it can touch your skin easier. If possible wear a rubber glove

Nice one ruby but I dunno if I can try this my skin reaction is on another level, raw Yam touches my skin and d nxt 1hr am so uncomfy itching all over but I just might risk it cos I've nver had ojojo
Alero, you could try blending it. Cut yam into tiny pieces so the blender blades can easily rotate and grind the yam pieces. If it gets stuck, add few drops of water.

Lizzy, I believe you'll get your desired akara. Please ensure you don't add too much water when blending the beans and stir the ground beans mixture very well inorder to trap air into it to get the puffy texture.

This can also be done with normal yam,if u don't lik water yam. follow same proceedure.
To be served with gravy.(Yam balls n sauce).Its yummy.
^^I don't even know how to differentiate it myself by sight. I only know it's water yam when it's very easy to peel.
You could ask the seller for water yam when you go yam purchasing.
