FOUR DIFFERENT METHODS OF PREPARING TOMATOES BEFORE COOKING NIGERIAN TOMATO STEWS:
1. Boiling the washed tomatoes before blending.
2. Blending before boiling but, straining out the excess water once the foam is gone and paste separates from the liquid.
3. Blending fresh and tin (Canned) tomatoes together with onion, boiling before use.
4. Blending tin tomatoes with onion and pepper, boiling briefly before frying.
After Lunch, they all asked that I stick to this method of making stew without frying the tomatoes. It was very delicious.

INGREDIENTS TO MAKE TOMATOES STEW WITHOUT FRYING THE TOMATOES:
Tomatoes
Tatashey
Onion
Soya Oil
Goat meat or beef
kpomo
Stock
Smoked mackerel
curry powder
Black pepper
Seasoning cubes
Salt to taste
STEPS TO MAKE FRESH TOMATOES STEW WITHOUT FRYING YOUR TOMATOES
1. Blend and boil your tomatoes, fresh peppers, onion, and tatashey briefly.
2. Drain out excess water with a sieve or fine mesh strainer. Keep the liquid aside please don’t throw away. You can use it later or for another cooking.
3. Put back tomatoes in the cooking pot to dry completely.
4. Add your oil whether palm oil, groundnut oil, or vegetable oil.
5. Cover to boil and cook in the oil.
6. Add your cooked proteins, meat, fish, or whatever steamed something you want to use as particles for enjoyment. Seasoning cubes, in case you didn’t add to the steamed meats, curry powder, check for salt. Cover to simmer for like 5 minutes.
7. Add stock, check again for salt, and cover to simmer more.
8. Check that your pot is not burning, serve with boiled rice, spaghetti, plantain, yam, macaroni, or plain okra soup.
9. Enjoy.
