NB: Always remember that making moi moi in leaves and ceramics is the best option health wise.
Ingredients for moi moi in disposable cups:
2 Cups brown beans with skin
1 large smoked cat fish
5 large tatashe
2 small red pepper
1 large onion
1 small can Gino tomato paste
Salt
Seasoning cubes
Soya oil
water
Fry blended ingredients in hot oil |
Add Ingredients to ground beans, check for salt and seasoning, add more if needed |
Pouring moi moi in cups, I had to cook twice cos the pot couldn’t take all.
This quantity produced about 20 cups of moi moi. Pour boiling water in the pot before turning on the heat. Water should be at finger length so that moi moi doesn’t tumble when it starts boiling. Check the pot frequently. This moi moi cooked in 45 minutes. |

Nice one. Definitely easier than using leaves(tho the taste is incomparable) but then I wonder if this is same as using plastic since they discourage from its use coz of chemicals.

I will ALWAYS prefer using leaves anyday, anytime!
I didn't know how to wrap with leaves too till momsy forced me. Thank GOD, I'm very proficient at it now.
Apart from health issues, I've tried using nylons and the moin moin doesn't come out well; one side is cooked, another is messy and the remaining part cooked but with leaves, all is perfecto!

For those who can find leaves, it's definitely more natural. Plastic conetainers work for me better than the aluminium foil which I used before – the cups you can either dispose of after use, or wash and use again. Here's a link to my moi moi in a cup;

Aunty Jay, Ruby and everyone, these cups are not pete pete like nylon bags, they are sturdy.
I love leaves too but when they are not available I think these cups are far better than nylon bread bags.
I won't use nylon bags now but I think I can manage these drinking cups o.

@mrs FT why nylon, plastic etc is not good is because it is boiled with hot water for a long time. It hs even been said it not good to drink very hot tea in plastic cups. The water you drink with disposble cups is not hot water so that's. Ok

No LNC, I use brown beans with the skin for both akara and moi moi and there is no difference.

My time saver for peeling beans. Soak as usual for about 20 minutes and put about a cup and a half in the blender at a time. Cover with at least 3 cups of water. Whiz in the blender or pulse for a minute or until you see the skins separate from the white. Voila. Takes me less than !0 mins so I can actually make akara and moinmoin in the morning before work.
