The fish isn’t part of the cooking until stew is done. Fried fish only comes into the pot when you are satisfied that stew is almost cooked or cooked.

INGREDIENTS FOR FRIED FISH STEW
To Make good stew, you need the following tomato stew ingredients like we use for Nigerian tomato stews:
- Tomatoes
- Fresh peppers (Ata rodo or habanero peppers)
- Tatashey (Red bell peppers)
- Garlic
- Ginger
- Little green pepper
- Vegetable oil
- Onion
- Seasoning cubes
- Salt to taste

BEFORE YOU COOK… Ensure that the fish is washed, salted and well fried. Set it aside.
COOKING DIRECTION
- Blend the tomatoes with onion and peppers, you can add just a tiny clove of garlic and ginger. Another great method is to just boil the tomatoes alone till soft. Then blend with the other ingredients (That saves time). If you use this stew method, then skip 2 and 3 below and go straight to frying.

- Drain out the water with cheesecloth or a very fine strainer. You can let it boil down if you have the time.
- Fry in hot oil with seasoning cubes and add your fish, beef, or chicken stock. Any stock is fine. Check for taste and adjust by adding salt if needed.
- Finally, gently drop in the fried fish one at a time into the pot of cooked stew.
- Reduce heat to low, cover the pot, and leave to simmer for about 5 minutes or less. While it simmers the stew gets to simmer right into the fried fish and improve its taste tremendously. Check that heat is low enough not to burn the pot.
- Serve with hot boiled rice, plantain, yam, bread or boiled beans.
