HOW TO MAKE EXCELLENT NIGERIAN PUFF PUFF WITH EASE. Nigerian puff is that puff puff that’s round, soft, airy, fluffy, light, and a bit oily with that little nutmeg flavor hiding inside.
Excellent puff is great, sweet but not sugary. It can be made with or without pepper depending on who it’s being served. Adults prefer peppered puff puff while kids like theirs without the hot spice.
As I get better with puff puff making, I have mastered the art of making this delicious snack without messing my fingers.
I start and finish the puff puff making using kitchen utensils to mix and scoop and fry. This puff puff was cleared in 6o0 seconds, with chants of ‘mommy we want more’ everywhere in the room.
INGREDIENTS:
2 cups flour
2 teaspoons instant yeast
1/4 teaspoon salt
3 tablespoons granulated sugar
1/2 teaspoon nutmeg
11/2 cups warm water
Oil for deep frying
PROCEDURE:
1. Sieve all ingredients into a large bowl.
2. Add the water and mix with a spoon or your hand.
3. Cover and leave for 1 hour
4. Break the bubbles that would have formed while it waited and mix with a spoon or your hand.
5. Fry in medium to hot vegetable oil.
6 Serve hot and snack away.
If you like pepper and onion in your quick puff puff, add the pepper and onion just before you start frying and fry immediately. Add after the batter has rested for 1 hour with yeast. My hands did not touch the dough from beginning to end of this puff puff making. Mixing was done with a wooden spatula. The best spoons should be deep like your measuring spoons. Or small size measuring cups.
