How To Cook Tasty Afang Vegetable Soup With Fried Crayfish. This is not the first Afang soup post on the blog, there are so many vegetable soup posts already. I decided to add this because I like the sharp taste of fried crayfish in vegetable soups. This method of cooking vegetable soup gives a unique rich taste.
Some people boil Waterleaf or squeeze out the green juice before adding to soup, well, I don’t and it has never hurt us nor changed the taste of my soups. I wash and add waterleaf at the same time with other vegetable cos I can’t afford to let my veggies overcook or lose their nutrients.
Like I always say here, after adding veggies, it is best not to allow the pot boil for long cos that will make your soup watery as the vegetables will bring out all their juices while boiling.
Serve vegetable soups fresh, green, and a bit crunchy.
Ingredients For This Afang Soup:
- Shredded Afang Vegetables—#500 Naira Worth
- Waterleaf—2 very large bundles
- Goat meat—1kg
- Stock Fish–2 packs
- Dried Catfish–2 large ones
- Crayfish–1 cup
- Pepper sauce
- Salt to taste
- Seasoning cubes–2 or more depending on your taste buds
- Palm oil
- Water
- Large Snails (optional)
- Periwinkles (optional)
COOKING STEPS

Cover and bring to a boil. While the soup is cooking, fry the ground crayfish and onion in hot oil and add at once or add after adding the vegetables. |
Vegetables should come in only when everything is cooked. |
The addition of fried crayfish makes this soup taste great and different from the normal afang soup we know. This was packed and kept in the fridge, wasn’t served immediately. |

Eya pls dnt be angry but the food at the background of the page; the fried plaintain, fried egg and baked beans is a No, No for me. Its the most boring food have ever seen and the presentation is not inviting at all. Its so tarcky and the plate design is so ugly rather doesn't wrong plate for wrong food. I prefer the former pix or you can change to another food, maybe one wicked vegetable soup and pouned yam pix. Like coca coal table mat once you see the pix of the food on it you must be hungry. Pls aunty eya and blog readers, help me, am in tears writing this now, I embarked on a journey wit my younger Bro n when we arrived home, cos I Wasn't able to prepare d meal as soon as possible, he ceased my phone, beat me up( have a dislocation) and dragged me on The floor to d kitchen to cook n I'm not exaggerating. He is so rude to our parents n I can't explain what d matter is. I thought he would kill me. Am so scared of home now alone with him cos asuu is keeping him at home and I'm on leave. My parents travelled although they are aware of what happened but I know they can do little or Nothing to salvage d situation cos he's rude to them. How old is he? He needs prayers and a good walloping in equal measure. SMH nonsense! He sounds like he is possessed. On a serious note though, he needs counselling and prayers. Perhaps you can ask your parents to seek the help of a professional family counselor- let them find out what he is so angry about that makes him act the way he does. In the meantime, avoid him as much as you can and pray for him. Sometimes that's all you can do.

Hi Chi, I ate afang soup with all my pregnancies and it didn't hurt one bit. I never liked draw soup while pregnant so afang, egusi and white soup were always my favourite pregnancy soups and no Doctor advised me to drop afang.
If you can eat other green veggies while pregnant, what makes afang different. The quantity of waterleaf is even more than the okazi itself. I don't think what you read was written by a Pregnancy expert.
Yes Sharra is right and the fried crayfish and onion can be added before or after you add the green veggies. To ensure tha green veggies come in last, just add the crayfish and stir or even boil a little before adding vegetables.
Pepper sauce is added the way you add pepper to your soups, can be added while boiling the meat or later. Picture 5 was when I added my fried crayfish and it's not looking palm oilish because the oil wasn't much.
Hahaha, afang is okazi it's not ugu. Ugu is flutted pumpkin. I fried my ground crayfish and onion in oil before adding o. Vegetable sellers will show you afang, buy the one that is already cut and still fresh cos some sell dry vegetables.

Would love to try out the recipe, but the quantities for the okazi and water leaf are unclear as cost and sizes of a bunch differ depending on where one is. Would you please consider putting up a pic of what a bunch of water leaf for this recipe would be and translate 500 Naira worth of okazi to number of cups after grinding. Pleeeeeeeaaaase!!!
