This ugu leaf ogbono soup is really delicious, cooked with dried mushrooms. Mushrooms add flavour to foods.
They are loaded with Antioxidants. Antioxidants help protect the body from
damaging free radicals that can cause some not too good conditions like heart disease and cancer.
They also protect us against damage from aging and they boost the immune system. Mushrooms are rich in the antioxidant called selenium (Google it).
Dried mushrooms are sold at supermarkets all over the country. They are delicious oh. Edible and we don’t have to be scared at all. Do not buy mushrooms from just any seller because some are toxic. Buy from reliable supermarkets. They are nutritious and very tasty.
I add these mushrooms to soups and even stews. Even when the quantity of meats is small, mushrooms can make the pot of soup look like a million-dollar pot of soup. They are good for the whole family.
When next you see dried mushrooms at supermarkets, don’t be scared, they do not sell poisonous ones for food. They are dried because that is the way to preserve mushrooms.
I cooked this ugu leaf ogbono soup with just a handful of mushrooms, about 9 pieces from the large bag but they look much in the soup because dried mushrooms rise and even double in size.
If you do not like them big like kpomo in your soup, you can cut into tiny pieces before soaking in hot water.
TO COOK NIGERIAN SOUPS WITH DRIED MUSHROOMS
1. Rinse and Soak mushrooms in hot water for 1 hour.
2. Remove them and stir fry with onion and salt till onion is almost brown or till fragrant.
3. Add to soup in the middle of cooking and stir.
4. The hot water used in soaking the mushrooms should also be added to the soup or stew as that water is nutritious too.
If you do not like stir-fries, you can just remove your mushrooms from the water and add to soup directly but the stir-fried ones taste better.
