How to cook Nigerian fried rice
This is simple, affordable and easy to cook Nigerian fried rice recipe, cooked with simple ingredients that are easy to find anywhere in markets or shops.
In Nigeria, Fried Rice is the meal for great events like weddings, Festivals, Christmas celebrations, House-warming, New Car Washing, Child Naming Ceremonies, Child Christening/ Dedications, and even Funeral Commemorations. It is much loved by Most Nigerians.
Fried rice innovations over time
Back in the days, not many women knew how to cook fried rice. All we did was cook our
“Rice and Nigerian tomato stew” or “Jollof rice” at home, and eat out whenever we craved fried rice. In food outlets, fried rice is the most expensive of all rice meals on the Menu. Well, this is considering that I have never bought sushi.
Fried rice is loved by many. Children grin all through the cooking and never leave the kitchen anytime a mother announces that lunch is fried rice. With all the colorful vegetables in there, I am forced to think that fried rice is the most healthy of all rice meals.
Different methods of cooking Nigerian fried rice
There are other “methods of Cooking Fried Rice.” There is the
method where all the vegetables are added to the pot of rice and cooked before frying. There is also a method whereby the rice and vegetables are fried together while mixing.
There is another method I call lazy man fried rice, that’s the method below. Here the vegetables are stir fried and added to already cooked rice without frying again.
One thing is common with all these methods of cooking fried rice; The taste and aroma is the same. The methods of “cooking fried rice” may vary, but the taste remains that unique Nigerian fried rice taste.

Stir frying vegetables in oil with some seasoning before mixing with the cooked curried rice. The young ladies asked that we come with soft but crunchy fried rice. What? soft and crunchy together? How is that? Thank God, I just came up with, OK, soft rice mixed with all the crunchies like much cabbage, carrots and sweet corn. That was how I cooked the rice very soft, and made sure that cabbage was much. What was the score from the students? a whopping 110%. |

Oh Sis Eya, I must delete d image of this fried rice from my memory or I'll dream of it the whole day.lol. You remind me of my secondary school visiting days but it was white rice n stew or jellof rice and chicken then. This is yummy but Eya I think u take too much seasong; 6cubes of knorr is much for 3cups of rice; sure I won't use more dn 1knorr cube and it wl stll come out nice; if I use 1wrap(I.e 2cubes) to boil my chicken n I'm using d stock 2cook d rice; dn jst 1cube will be ok for 3cups of rice; I learnt too much seasong(maggi n d rest) aint dt gud for d body, Mrs AJ
Thanks Mrs AJ, you forgot about seasoning for the stir fried vegetables. They need more seasoning than even the chicken stock. The vegetables are almost tasteless without enough seasoning.
Yes Mrs Aj, when I cook jollof or Fried rice. I use more seasoning cubes than usual. But this one was too much. I had to fry the vegetables with no seasoning to help balance the taste. Thanks too for drawing my attention to the number. I used two wraps of double Knorr cubes, that should be four and not six. I will correct it now. Six will just turn the pot into a salt lake.

Madam cook it 1st then u'll know hw much seasoning u need in fried rice,cos once u add d veggies u need more seasoning to bring out d taste! Or else u r going to av a very tasteless fried rice!

Coating with bread crumbs will give you a more crisp chicken 🍗 though.

But some people do use butter…..but wonder at what stage the butter will be used
hi eya,pls i have a little here,when i stir fry my vegetable,it ends up getting burnt and its always stil very hard. it doesnt get soft. please what cn i do. pls help a sister
Put your vegetables in COLD OIL before turning on the heat. Continue to stir and let them cook in low heat. DO NOT ADD VEGETABLES TO HOT OIL.

Spices? Use curry powder, tumeric, chicken or beef stock from the meat you boiled and much onion. This should give you very delicious fried rice.
Sweet corn is optional. Most people don't like corn in their fried rice.
