Nigerian Groundnut soup (Peanut soup) can be cooked with or without green vegetables. We cooked this one with ugu vegetables. I like it more when the groundnut is roasted a little bit before grinding like this one. Here, the crayfish is
ground together with the peanuts. This time I left the soup thick without adding water to make it light. Loved the rich green and fresh vegetables.
 

Ingredients for Nigerian groundnut soup with vegetables

  • 11/2 cups groundnuts
  • 11/2 kilos of beef
  • 2 large smoked catfish
  • 1 pack stock fish
  • 2 knorr cubes
  • 1 medium onion to steam meat
  • 1 teaspoon pepper. You can add more
  • salt to taste
  • 1 tablespoonful palm oil
  • 3 bunches ugu vegetables (fluted pumpkin)
  • Water enough to cover the steamed meat
Before cooking this Nigerian groundnut soup, get all ingredients ready and set aside while meat
steams.
Before you cook Nigerian groundnut soup, first get the groundnuts roasted and grinded. Pluck, wash and shred the vegetables and set aside. Cook the meats together with stock fish, dried fish, some diced onion , seasoning cubes and salt till almost tender. When meats are almost cooked (See steps below). The Nigerian groundnut soup cooking begins.

HOW TO COOK NIGERIAN GROUNDNUT SOUP WITH VEGETABLES

  1. First knowing that all the ingredients are ready and set aside waiting for actual soup cooking. Add palm oil and cover to boil very well before adding the ground peanuts (Groundnut).  cover and let the peanuts boil very well. Stir, check for taste and adjust by adding some more
    salt or water if needed.
  2. When all the ingredients are boiled well and the oil mixes well with soup base.
  3. Fin
    ally add the ugu vegetables and let it wilt a bit. Stir, check for taste and turn off the heat. The green vegetables shouldn’t overcook.
  4. Enjoy your Nigerian groundnut soup cooked with vegetables.

This groundnut soup with vegetables  was so much it was packed and kept in the freezer. Groundnut soups get bad easily. After scooping, pack and preserve in the freezer or re-heat. The green vegetables should not be allowed to cook and turn brown.
 
I can eat this soup alone as a meal. Serve with pounded yam, semo, wheatmeal, amala (not too soft) and starch.
To give a different flavour, fry the ground crayfish with onion before adding. So, that’s our Nigerian groundnut soup cooked with vegetables

Eya pls can i get the already ground groundnut in the market? and what quantity should be used for a pot of soup? also after putting the groundnut in the soup how long before the groundnut is cooked or is it that once it thickens then it's ready? Can groundnut soup be made without the ugwu? Sorry for asking so many questions lol i really want to try making this.

    For me, vegetable stews are best enjoyed with chewable foods or eaten alone rather than with swallows.

  6. Yes Nana but I don't know if the ground one in the market is roasted. I like it roasted.You don't need much groundnut, one cup is OK. Groundnut doesn't take long to cook, it takes just between 5 to 10 minutes to cook but you have to stir frequently so it doesn't stick to the pot.

  8. Another quick question…..if it has 2 b raw peanuts,do I rily hv 2 fry it a lil lyk u said cos I myt hv 2 grind in d market n dere's no way I can "fry it a lil" in d market b4 grinding.

  9. You can grind raw in the market. It's Ok raw but the taste is different from the slightly roasted one. I cooked with raw groundnuts before and didn't enjoy the soup as much as this.

  15. Aunty Eya,weldone!!! For me groundnut soup is one of my fav's. But den my mum used to add okro to it. Mostly dried okro,and d taste is so yummy…but evn with fresh okro its still alwaz delicious..for those asking if they can use raw g/nut or d normal roasted g/nuts,I bet u d taste ain't d same at all…

    strong for us despite all the hateful comments.
    I saw yesterday's post on groundnut soup & saw a reply saying it cooks
    for about 5-10minutes, someone also asked if it'll not give a runny
    stomach.
    Am half Nigerian & half Ghanian(lol) so groundnut soup is a regular in
    my house. The truth is it cooks for up to 1hour(sure you're
    surprised), with that the soup does not go sour, no runny stomach & no
    need for any oil cos it'll bring out oil itself(let me also say,
    you'll know if the soup is done by the oil it brings out itself after
    which you can then add your vegetables). Try this & you can leave it
    in the pot till the next day without freezing & there'll be no fear
    for it being sour.

  22. Sorry about that sis, next time you cabn buy the already roasted groundnut sold in bottles. Check to see that the groundnut tastes good before using. Avoid buying the type with big nuts. I think the groundnuts with smaller sized nuts taste better.
    You can roast until it begins to taste good when chewed.
    When you try again, pls let us know how it went.

    seriously I lyk groundnut soup but hvnt tasted d one prepared wit ugu leaf,I normally use bitterleaf. I prep mine with already roasted groundnut,and I don't pour it into d pot like dat,I 1st fry it wit palm oil and onions,den add my stock(d steamed meat $ all)and let it boil. After a tym I add water and let it boil 4 @least 30 mins. I think am gona try aunty eya's soup,its sure good to try new tins,and it luks so fresh and inviting.
