Green Veggie Chicken By Gift

Good morning aunty eya,
I would have sent various recipes with pictures but it cannot be sent to your mail but i will send this recipe without pics for other sisters in the house-to try. I hope you would post it, I will try to be as explicit as possible.

Green vege-chicken( trying to forge a name lol)

Ingredients:
Green (that’s the name of the vegetable, ask market women)
Live chicken(frozen won’t taste the same)
Ugba( some igbos call it ugba, akpaka etc)
Iru(optional but the smell is irresistible)
Onions
Crayfish
Palmoil
Seasoning cubes
Fresh or cameroon pepper
Salt

Procedure for cooking
Cut up your

chicken and cook with onions, pepper, seasoning and salt, please don’t add thyme or curry, it could overpower the natural taste we long for.  When the chicken is properly cooked, put it down-

Slice your green, wash with salt to get rid of sand, when pour boiling water over the green and leave the water for about 5mins to soften it.

On your clean dry frying pan, when the pan is heated up, add palmoil, not too much, then when hot, add some salt, onion and fresh pepper to fry a bit add your iru, add your ugba/akpaka, and stir, after 2mins, add some of your ground crayfish and stir. Oh the smell! Add seasoning cube, be cautious with the seasoning cos iru is a seasoning ingredient, and the chicken contains seasoning too. Then stir and add your drained green into the frying pan and stir with the ingredients together, watch the vegetable reduce( pls this recipe isn’t for those that don’t cook their veges;)) add the remaining crayfish, stir and check for taste. Reduce the heat and add the cooked chicken inside the pan and stir all up. After a short while, put it down-and serve. Daddy can’t just have enough of this, I believe this is a little treat one can serve to the family this weekend. Your responses would be appreciated.

  2. @anon 4.15, ugba isn't optional here cos its a local dish but u can try without using it and Ơ̴̴̴̴͡.̮Ơ̴̴̴͡ how it goes, those asking for pics, as indicated on the message sent to aunty eya, I couldn't upload it to her email but I tried to state the procedure as explicit as possible.   3. @anon 9.32, ugba is not a vegetable, cannot describe it but if you ask igbo market women of ugba, they would show it to you and sell to you too, @ chiko, u eat the meal alone not with anything. Cheers,

  5. It can also b eaten with boiled unripe plantain or yam depending on d quantity of vegetable sauce. Good job @poster, thanks for sharing.
