HOW TO COOK NIGERIAN FRIED RICE WITH CHICKEN GIZZARD
it’s diced in fried rice, I love. I tried to post this gizzard rice recipe in January, some cooking pics won’t just upload. So yesterday, I cooked with the same recipe and it still tasted really good.

HOW TO MAKE
I used just 12 pieces of well cooked gizzard out of this pepper soup to dice and add to the cooked rice. |
Colourful ingredients starting from a small plate of green peas, much much onions. If I tell you how much onions we use in my house, you may not believe. Sometimes, a basket lasts for just two weeks, yes.
The benefits of eating onions are too numerous not to overload with it. The longest a basket of onions stays in this house is one month. For fried rice and even tomato stew, onion takes the upper hand |
Gizzard fried rice ingredients:
- 3 cups basmati rice
- 1 tablespoon curry
- seasoning cubes plus monosodium glutamate (white maggi)
- Salt
- Beef stock
- 1 small plate green peas
- 3 medium sized onion
- I large red bell pepper (tatashey)
- One medium sized green pepper
- 4 large carrots
- 12 pieces cooked gizzard
Adding white maggi and other ingredients to beef stock, yes, white maggi. ( Remove ya eye from the oil and water stains on the cooker unless you want to tell me that when you cook your rice, water doesn’t splash and dry up on the hot cooker.
I didn’t want to add this pic at first but the cropped one refused to send, what am I supposed to do? leave it out? na lie o. I’ll wipe when the cooker is cold enough for my tender, baby hand). If after cooking your rice meals, it still tastes like something is missing, try adding white maggi.
ABOUT COOKING RICE WITH MONOSODIUM GLUTAMATEMonosodium glutamate is the medicine for rice dishes. It has a way of giving rice that rich taste that makes you eat a little too much. I don’t add it to soups or stews, just fried rice, coconut rice, jollof and palm oil rice. When you try it, if I’m lying, leave a comment. Most Nigerians don’t like white maggi but they enjoy other seasoning cubes with no knowledge that white maggi is in all of them written as monosodium glutamate when you read the seasoning cube ingredients. Onion is translucent, that means the veggies are ready. I check for salt before adding to cooked rice, that’s my lazy man way. You can fry the cooked rice at this point in batches with the veggies and gizzard. |
Stir fry fried rice ingredients in oil with more seasoning cubes else you have tasteless fried rice. You can add curry to these if you like, I didn’t. |

The bit about white Maggi I find very interesting.
I must ask my mum to send me some as I am now curious.
I don't think I have ever eaten food cooked with that ( that I was aware of that is) and I tended to associate the white Maggi to the horrifying tales about it.
I'll try it then.
