Ghana Jollof Rice Recipe. Hi, This is how I make my Ghana jollof rice.
Ingredients For Ghana Jollof Rice1. Rice (long grain)
2. Vegetables (tomatoes, pepper, ginger, onions, carrots, green peas, lettuce) depends on what you like 3. Goat meat 4. Oil 5. Seasoning (depending on what you use for stew 6. A little curry powder 7. Bay leaves 8. Tomato paste Ghana Jollof Rice Recipe |
Cooking Directions
1.Sauté onions for about 2 mins under medium heat.
2. Mix tomato paste with a little water and fry with sautéed onions. I mix with water to remove any sharp taste in the tomato paste
3. Add you blended tomatoes, pepper, onions and ginger to cooked tomato paste.
4. Allow to cook under medium to low heat.
In the meantime I start to cook my goat meat in a normal way( salt, onion and some pepper).
5 . After tomato is done cooking I add my the green peas ( you can wait till later to prevent the peas from being too soft).
6. By now goat meat is cooked and fried so I add to tomato stew.
7. Now I add a little curry powder(very little) to stew.
8. I now pour in my washed rice and allow the stew to cook it for a short time.
9 . Then I add the right amount of water so the rice doesn’t get too watery or too hard.

Jollof rice cooked this way tastes so great and a bit different from the one that we have to boil the rice till done before mixing with the stew.
This method allows the tomato stew to boil, then simmer into the rice while cooking. Yummilicious yummy. You can find another recipe for green jollof rice HERE.

Nice Job Celise. Next time I think it will be great to add green peas when the rice is almost cooked so that they don't get crushed when you stir the rice.
I will try this method, I always used to cook the rice separately and then mix.
Hi this is Celiae. I have never tried it with only the purée. I only add the purée for more colour. I think you should use tomatoes cos it all adds to the taste. Thank you!!

Yes I realized that. Next time I would add the peas and other veggies when the rice is almost done to avoid it being too soft.

The bay leaf must have been used to boil the meat.

Anon 1:58, bay leaf goes inside d rice not to boil meat. Looks delish, I've never added meat to cook together with j rice, I'll give it a try.

@Jeanette, yes u can use only puree for ur jollof rice,but don't forget to add ur meat stock for added taste cos puree isn't as tasty as fresh toma. I have done puree alone jollofrice several times and it comes out really tasty n colorful too.

Yes the bay leaves goes into the jollof. It releases a very sweet aroma and adds great flavor to the jollof.
