Fried Rice With Akara, Soy sauce And Coated Chicken. There are many methods of cooking fried rice depending on what you want. For me it’s how and what the girls want that I cook. My ingredients change according to the mood.
Sometimes they don’t want red kidney beans and I use cooked and fried cow liver. The color also depends on the brand of curry used.
This blog has taught me a lot. Thank you guys. I never knew Benny spice, learnt on this blog.
We never used soy sauce in my house. I tasted it only when I eat out. Now I know how to use and enjoy it at home.

No, Sweet16mum, it didn't take the place of vegetable oil. I added 2 dessert spoons of soy sauce to vegetables. You can see the dark soy sauce on the veggies in the fry pan. There's a little oil on the bottom of the pot.
Thanks Ahdaisy. Sometimes I dry in a fry pan. Place the slices of bread in the pan and continue to flip sides so it doesn't get burnt. When dry, I remove from heat and allow to cool a bit and harden even more, grinding is very easy when bread is dry. Use a dry fry pan with low heat. It dries well. Wheat bread doesn't dry fast. Use ordinary mallam bread or french bread.
Yes Deborah, it's a dessert. We enjoyed it after eating the fried rice. Some people chose to eat theirs along with the rice sha.

Akara? My first time of hearing it can be served along with rice to the family or guests…personally I eat it like that whenever I have leftovers because it is still the same beans to me. I am learning everyday. Thanks for sharing Eya.

Hello eya, had made akara for breakfast yesterday. Do u guys know instead of turning the blended beans(in a mortar) to infuse air, dt one can use baking powder. It makes my akara rise up like puff puff, all beautiful and brown and the best part is dt the baking powder doesn't change d taste. Just tot I shld share this. Also made cake yesterday too and coconut chips. It was rather fun. Eya, keep it up. Creative Mom

I have beans tat were literally attacked by weevils, so I'm dedicated these beans to akara/moi moi. Eya, pls do u knw anyway of conserving beans so that these insects don't get to it. Tnks. Put beans in a plastic airtight container and store in the freezer.
Another way of preserving beans to keep out the insects is to store the beans in a jerry can, maybe 4-10 ltrs can. The kind you use to store water in the fridge, before you close airtight, pour a large quantity of ground dried pepper and shake vigorously, then close airtight. It works like magic!
AUNT EYA, I LIKE DIS. PLS DO U BOIL D RICE WITH ORDINARY WATER FIRST TO REDUCE THE STARCH, OR U BOILED IT STRAIGHT AHEAD WITH THE CHICKEN SOURCE?
