Hi aunty, here is a meal prepared by my very good friend, who comes to the blog a lot and

a times comments as anonymous.

Fish casserole. It can be eaten with rice, yam, pasta, couscous but because she is fasting she made it alone as a light meal to break the fast.
 

INGREDIENTS:

1 medium sized onion
1 small sized cabbage
3 cloves garlic
 3 small ginger
4 small carrots
4 runner beans
2 medium sized catfish
2 cubes Maggi crayfish
1 table spoon ground fresh pepper (scotch bonnet/ata rodo)
Salt to taste
3 cups water to start with. You can always adjust by adding more water if need be.
 

COOKING STEPS: Fish Casserole By Deborah Bala’s BFF

  1. Stir fry your chopped onion with seasoning cube in oil.
  2. Add ground ginger and garlic and stir for about 30 seconds before adding the other vegetables without carrots. Stir and cover to cook a bit until the onion looks translucent.
  3. Add water, carrot and the remaining cube of maggi. You can add pepper too now. Check for salt, taste before adding the fish last so that you do not need to stir anymore. Cover and let fish cook for about 5 minutes or more. Fish cooks really fast. Check, taste and adjust water quantity of you like.
    1. Satisfied with the taste, remove from heat and serve.
Note: You can always thicken to desired consistency with a teaspoon or more of baking flour.

    Procedure.
    1. Blend your tomatoes, pepper and onions
    2. Fry the oil with onions, thyme and curry.
    3. Add the blended tomatoes, blended fresh ginger and garlic into the oil.
    4. When well fried u add some water, preferable you have stock from boiled meat.(The water should be to the quantity you want).
    5. You add maggi and salt to taste.
    6. You add your fish to the stock.
    7. Allow it cook for 10mins.
    8. Add the carrot and green beans, allow it boil for awhile (leave the pot uncovered after adding the carrot and green beans).
    9. Add the cabbage.
    Your fish casserole is ready.

  3. Nice one! Thanks for sharing… I'll replace catfish with another type of fish though… I don't think I can be paid to eat catfish. Lol.
