Egusi Stew To The Rescue. When you taste this stew, you won’t bother too much about the scarcity and cost of fresh tomatoes at a time when it’s supposed to be surplus in the market.

HOW TO COOK EGUSI WITH TOMATO STEW


Egusi stew Ingredients :

  • 2 cups ground egusi  (melon ) 
  • 2 medium sized onion 
  • A handful fresh pepper 
  • 1 medium sized canned tomato 
  • salt to taste 
  • 1 teaspoon curry powder
  • 1 teaspoon Nora jollof spice
  • knorr beef cubes to taste 
  • Some pieces of cow tail. You can use beef or your meat of choice. 
  • Beef stock 
  • vegetable oil. If you making the stew for swallow, use palm oil instead. 
  • Some water to blend and boil ingredients. 
 

Cooking Procedure 

First I blended the onion with pepper and tomato.

Added water and mixed with egusi for boiling.

Boiled with some salt till egusi is cooked.

I  then fried a little piece of the onion I left,  added the cooked egusi/tomatoes and fried adding seasoning and salt.  

When stew is well fried, I add the meat and beef stock, check for salt and taste, allow to simmer until my whole compound smells delicious. Food is served.

Very yummy with boiled rice. Will also taste great with boiled yam, plantain and. ……. For swallow,  I’m going to add ugu, turn the left over to soup, eat first and see how it goes before posting.

  3. ME: What? Egusi stew is something that a lot of people especially students cook, not a new recipe. I'm shocked. My family enjoyed the one I cooked. What meat did you use? You added stock and seasoning? Boiled egusi before frying and all?

  4. MAILER: yes i did all dat, i used cow skin. maybe i didnt add enough water to the egusi and blended ingredients
    while boiling. i think dats where i made a mistake, thanks. i ll keep
    trying till i'm perfect.

    ME :Ok, you know cow skin alone doesn't add taste to food. Even with the cow tail I used,you know I still added beef stock. Next time, instead of cow skin, buy meat or fish then if there's still some change, you can then add kpomo so that your food gets that stock taste ok?

  5. Mine is outside. I don't think rain and sun affects it.
    I have seen a protected one somewhere. In a small hut that looks like a dog kennel but a bit spacious and padlocked. The carpenters know what to construct.
