Eggplant Chicken Sauce For The Weekend


Delicious garden egg chicken sauce.

This quantity eggplant (garden egg) chicken sauce served 10 with some left over. So happy I remembered to take pics again. This looks like is something we have cooked before. I almost didn’t take pics but had to because it has an ingredient that wasn’t added to the shredded chicken sauce. Or our Nigerian Chicken Sauce, Tastes great, very different, delicious and nutritious. Even kids loved this. This egg plant sauce can be serevd with boiled rice, plantain, yam macaroni etc.
With the help of a food processor, cooking was done and served within 30 minutes. Vegetables done

in seconds. Normally, I would have had to chop one after the other with a knife and that delays cooking. I still don’t like spending hours in the kitchen. When in there, want my cooking done the fastest way possible and I’m out doing other things.

Some  Ingredients, I used just 3/4 of this cabbage 

 Ingredients For This Egg Plant Sauce:

  • Aubergine (eggplant)
  • Soft Chicken
  • Carrots
  • Tomatoes
  • Green pepper, you can also add tatashe
  • cabbage
  • my pepper sauce
  • seasoning cubes
  • salt
  • water

 Eggplant cut to be put in the food processor, you can chop with a knife

 Chopped, shredded and diced vegetables in the bucket. All these was done in about 40 seconds

 This is about 1 and 1/2 kilos frozen chicken waiting to thaw

To save time, do not do this at home, just get your chicken fillets from the market, you can see that bones at the corner, though I later added them for my sole enjoyment

 PROCEEDURE:
First I boiled the shredded chicken with some onion, salt and seasoning before adding to the sauteed vegetables boiling beside. The seasoning cubes in the vegetables alone is about 4 o. Vegetables alone have no taste so I kept crushing until I could taste something other than blandness.

The chicken and veggies are left to simmer for about 5 minutes and that’s when all the juice bursted out. No water is added here. all the sauce/juice is from the chicken and vegetables.

 I had initially planned to thicken with flour when water is added but seeing all this juice in there, I changed my mind

 Enjoying five star sauce at home, cheap, vey very affordable. The cost of everything here is so small compared to eating out.
