COOKING STEPS FOR Crunchy Peppered Snails By Shayor
First I washed the removed snails with Alum and warm water. Boiled with onions, one knorr cube and salt. Then, sliced my onion in big rings. In another pot, heated the onion rings, fried till translucent then added roughly blended chili peppers. I fried till dry then added snail stock. Simmer for 5 mins, stirring continuously so it does not burn Meanwhile, fried the hard boiled boiled snails till crunchy. Then added the snails to the pepper sauce. Stir in the snail Added the scent leaves and turned off the heat!
Now that's what makes a good cook. Cooked with finely chopped onions to let more flavor out and then made a sauce with a large onion rings to add a taste of crunchy fried onions to it. Most not-so-good cooks will make d sauce with finely chopped onion. I salute you Shayor. Onion flavour and essence is perfectly incorporated in this dish. When I make this, I'm going to be adding a side of ugba (ukpaka) light fried in palm oil, finely chopped onions, ogiri and stock cubes. http://www.terinrecipes.com
Wao wao!! This is the best appetizer I usually serve any time I hav "August visitor". I don't cook wit vegetables though thanks for imbibing dat in me now. As for adding the snail stock I don't like the taste so I usually cook it til d stock almost dries up. When frying d sauce after ading d snail I add little water to mk it simmer well..
