Rice is very popular in Nigeria, reason we have so many rice recipes. Fried rice is one of the most popular aside jollof rice. There are so many fried rice recipes with so many different ingredients such that sometimes one feels a bit confused if you don’t already know what is the basic Nigerian fried rice ingredient. On this blog alone, we have over 10 fried rice recipes with varying ingredients and honestly, everyone should be free to tweak the recipes to personal tastes. If you don’t eat liver for instance, feel free to substitute with gizzard without feeling awkward.

Sometimes we add sweet corn to fried rice but honestly, when you cook traditional Nigerian fried rice as should be, sweet corn isn’t necessary.

BEST TYPE OF RICE FOR FRIED RICE
For me, basmati rice always wins! Fried rice cooked with basmati rice is always a hit. Presentation is easy and it beckons on your guests like “eat me already”
Basmati rice grains look great for fried rice. I love it even though some of my kids think that basmati rice has an unlikeable flavour. I disagree anyways.
For my fried rice, sometimes I make fried rice sauce, at other times I use a different method.

Good Nigerian fried rice shouldn’t look greenish. The real colour for Nigerian fried rice should come between turmeric and curry colours, depending on the quantity of turmeric used it can look kind of yellowish. Some fried rice seasoning powders sold in the market these days have a way of turning fried rice to green and this was never the case until recently.
I don’t know the particular fried rice seasoning powder that does it but I think there is. I have seen green looking Nigerian fried rice at some eateries recently. Fried rice doesn’t need any special colouring. Just add little turmeric and some curry and your authentic fried rice colour is established right there in front of you.
I’d like to try the seasoning that changes the grains of rice to green but I don’t know it. Would also like to have a taste because I only use turmeric to give colour to my Nigerian fried rice.
