How to make coconut jollof rice
My Nigerian coconut jollof rice is cooked same way we cooked the Nigerian party jollof rice. The only different ingredient here is
the coconut milk for coconut flavour.

The green pepper and tatashe in the chicken stock were also not in the party jollof but these are optional. T
he major ingredient here is the coconut milk.

Ingredients For Basmati Nigerian Coconut Jollof Rice:
- 2 kilos chicken drumsticks
- I medium sized green pepper (optional)
- 1 large tatashe pepper (optional)
- A medium sized onion
- 1 teaspoon my pepper sauce
- 2 tablespoonfuls tomato paste
- 4 knorr cubes
- Salt to taste
- 2 bay leaves (optional)
- 3 cups coconut milk got from 2 grated coconuts and 1 sachet Emma coconut milk powder
- Soya oil
- 4 cups basmati rice. You can cook with any rice of choice
- Water
DIRECTION
Washed chicken drumsticks in the pot with ingredients ready for boiling before frying. You can marinate your chicken before frying, I like to season and boil before frying
While chicken simmers, I mix my tomatoes paste with onion, pepper and water for frying in the pot
- Fry the tomatoes and onion till tomato tastes better.
- Add the chicken stock and coconut milk.
- check for salt and seasoning before covering the lid to boil.
- Add the washed rice after the coconut milk and stock boils.
- Add two bay leaves at this point, you can skip the bay leaves if all you want is that coconut flavour in the rice. The bay leaves add some richness to the taste anyways.
- Reduce the heat after the rice boils and let it cook in low heat while your chicken fries in another pot.
- Once rice is cooked, stir fry the kidney beans and green peas with some seasoning, onion and pepper
