Nigerian chicken stew is cooked with tough chicken. Layers also called hard chicken. When you go chicken

shopping in Nigeria, you’ll know that Nigerians basically cook with layers, we cook with hard chicken why? I think I know the answer. It’s because here we don’t just marinade and fry chicken.

In Nigeria, chicken is washed, parboiled with onion and salt the way we parboil beef, then cooked into stew or soup with the other ingredients. Nigerian stews and soups take time to cook. While the chicken stew cooks, the meat doesn’t overcook or fall off the bones. By the time the chicken stew is ready, the meat too has become tender.

Chicken stew ingredients are just few basic ingredients because chicken doesn’t need many ingredients. It has its own taste and only needs ingredients like salt and onion and a few others to balance the taste to our taste buds.

1. Hard chicken or hen/ layer if you are buying live chicken from the market.
2. Onion. A generous quantity of onion is needed to make chicken stew. Chicken and onion go well together.
3. Garlic. Many Nigerian chicken stew recipes do not include garlic and they still turn out great. I add just sparingly. A pinch of garlic is just enough for one chicken.
4. Peppers. Fresh peppers like scotch bonnets, habaneros and the bell peppers.
5. Salt
6. Chicken Seasoning cubes could be maggi chicken, knorr chicken, onga or any chicken seasoning cubes of choice.
7. Vegetable oil
8. Tomatoes. Fresh ripe plum tomatoes are the best. They give a better result than canned tomatoes. Sometimes I use just blended ripe tomatoes, at other times I combine the two.
9. Blended carrots. This is not a popular ingredient in Nigerian chicken stews but I add it most times to make the tomato taste better and improve the stew. We enjoy our chicken carrot tomato stew

Chick stew ingredients in Nigeria may include locust beans (Dadawa) but that too is not popular. So, these chicken stew ingredients here are the basic. People can always add to their taste or delete the ones they don’t like but chicken cannot be deleted.
