A frittata is an egg based italian dish similar to an omelette. Once you have some eggs and vegetables. Your frittata is ready.
I have seen many recipes of plantain and egg frittata but they all cook with sausages. I didn’t want to cook for my family the sausage lovers without eating myself, so I waited and today, I shredded some
chicken, got some eggs and peppers and behold! Here is mine, cooked with chicken shreds, eggs and peppers.
Sorry I skipped the curry, thyme, garlic and many other ingredients because when I cook some foods for my lazy taste buds, the fewer the ingredients, the better the taste of the food.
INGREDIENTS:
2 ripe plantains
1/2 green bell pepper
A half red bell pepper
1/2 yellow bell pepper
1 seasoning cube
Salt
5 eggs
1 cup shredded chicken (I shred the chicken my self by deboning and cutting, you can use a cup of already shredded chicken from the shop)
1/2 tablespoon vegetable oil for stir fry
Another half teaspoon vegetable oil for the frittata.
DIRECTION FOR MAKING CHICKEN AND PLANTAIN FRITTATA:
First wash and peel the plantain, then cut into desired shapes, fry in hot oil till brown and set aside. I used cookie cutter to achieve this shape. With a knife, tear the peeled plantain open from top to down, place on a flat surface and press with the cookie cutter.
- Reduce the heat to low and let it cook till the egg firms.
