This carrot sauce is something I made last year and have been reluctant to post because the goat meat was over cooked. I forgot the meat on the cooker, it got over cooked but I still made the sauce with it. I just wanted that goat meat flavour in this sauce.
Although
it tasted delicious, I don’t like overcooked meat. And, Although there are other vegetables in here, I call it carrot sauce because the carrot is more. We know how good carrot is for good eyesight and smooth skin abi? Let’s find ways to eat more carrots.

I just received a message on WhatsApp this evening, a reader asking how she can make carrot sauce to eat with boiled yam and I said fine, this is the perfect time to post that forgotten sauce (Before, this post would have taken like 3 days or more to upload pics, now it’s faster than the blink of an eyelid).

Well, I don’t know if you meant blended carrots or just any carrot sauce. If you are serving with yam, chop the carrots into smaller pieces or better still, grate.
Ingredients for this carrot sauce: 6 carrots 2 onion bulbs 5 tatashey 3 cabbage leaves Maggi seasoning cubes Soya oil salt to taste 1 kilo Goat meat |

I added one green pepper and subtracted one red bell pepper (tatashey) |
Chop the vegetables in a food processor or with a knife. |

Add the goat stock and my overcooked meat after seasoning cubes and salt to taste |

The goat meat carrot sauce is ready, look well and you’ll see that the meat is almost falling off the skin. All in all my family didn’t notice the overcooked meat so, they enjoyed the sauce. |
