Nigerian Beach plain coconut rice is cooked with seafood (ingredients) and meats that one can find at a beach.
It is also plain coconut rice cooked without tomatoes. Even though there Tis coconut rice recipe posted on the blog that cooked the rice with tomatoes, This recipe is for plain coconut rice cooked without tomatoes using ‘beach’ ingredients (Sea food). It’s ok to also call it seafood coconut rice.
There were no shrimps available, so, I made do with crayfish. Will try and get shrimps next time. If you
are still thinking of how to bribe hubby this valentine season, think no more. Give him this coconut rice and see your dreams come true. The results were amazing. I have not cooked coconut rice for my
family in a long while and yum yum… the comments that flowed when this dish was served, I can’t tell you today. My family went gaga. There was no single soul that did not eat too much.
Cooking coconut rice takes some time when you want to do it my way, The original way. However, if you are in a hurry or are planning to serve this on a weekday, there are some short cuts:
TIPS FOR PLAIN COCONUT RICE WITH COATED CHICKEN
- Buy coconut milk or powdered coconut milk in sachets
- Buy bread crumbs
- Make your milk ahead of time and store in the fridge
- Boil and fry your chicken a day or some days ahead and store in the fridge. If you do this, the problem is; with kids in the house, who are so used to enjoying coated chicken from fast food outlets, they will finish the chicken before you are ready to cook the coconut rice.
This plain coconut rice is cooked without tomatoes.
BELOW IS NIGERIAN PLAIN COCONUT RICE RECIPE IN PICTURES
How to prepare coconut for coconut rice
Wash coconut before grating, you can easily cook with coconut powder or milk sold at the market. |
Grated coconut |
Pour in hot water to extract the milk and coconut oil from the chaff |
You may want to chop coconut in tiny pieces and blend to save time. Filter out the coconut chaff |

INGREDIENTS FOR NIGERIAN PLAIN COCONUT RICE
- 3 cups rice
- 1 kg chicken
- 2 medium sized coconuts or 1 pack Emma coconut powder
- Two medium sized onion bulbs
- 2 seasoning cubes
- 1 tablespoon roughly ground Fresh pepper
- Salt to taste
- Vegetable oil. I used grand soya oil
- 1 cup roughly ground crayfish
- 2 medium sized smoked cat fish
- Water
HOW TO MAKE COATED FRIED CHICKEN:
- 3 egg whites or 3 complete eggs
- 2 cups bread crumbs homemade or store bought (Flour can be used as a substitute but I prefer coating chicken with breadcrumbs)
First for the coconut rice, Fry your roughly ground or chopped pepper, onion, crayfish before adding the smoked fish |
Add chicken stock and allow to boil, then add coconut milk |

Cooking Steps For This Plain Coconut Rice:

Add washed crayfish, seasoning cubes, salt, rice to boiling coconut milk in the pot, check taste, cover the pot and let it boil
Check and taste for salt and seasoning in coconut milk
Add washed rice to boiling coconut milk
Add Crayfish to coconut milk |
reduce heat and allow pot to simmer until coconut rice is cooked |
Boil washed chicken with salt, chopped onion and seasoning cube before coating, you can marinate instead before coating, if that’s how you like yours.
For the coated chicken, first boil chicken with salt, onion and seasoning cubes. Take out chicken from stock and start the coating process by first dipping in egg white before bread crumbs. I dried my left over bread in the oven before pounding. You can blend yours. |
Rolled in ground bread crumbs. You can get already made bread crumbs at the supermarket. |
Well coated chicken, seasoned and boiled, dipped in eggs before breadcrumbs, about to be fried |
Chicken coated with eggs and bread crumbs
Frying the coated chicken in hot oil till brown |
Add chicken to hot oil and fry.
Fry coated chicken in hot oil till golden brown
Crisp fresh tasty fried chicken
Dark brown Coated chicken served with coconut rice.
CONCLUSION
did not add curry, thyme, tomatoes or any spices because I wanted the original coconut flavor in my rice and yes, it was so like fresh coconut milk. Extra super de li cious. If you don’t have time to grate, chop and bled or buy coconut powder and dilute with water to use.

Yes o, the first tym I cuked coconut rice for my husband twas witout a lot of spice n m hubby really enjoyed it, he stopped eating eba d whole wk cos I cuked a lot.

ok one thing..my problems are these
1. i dont know when the seasoning is enough (most times, it comes out wit far too less taste). How do i cross this hurdle? what do i do? whe i start cooking, the seasoning tastes ok..when im done, it tastes like there is no salt, no maggi, no nothing!!
2. creativity. i lack this for sure when it comes to cooking. I love good food and wich i cld come up with one. i love varieties too.. *sigh* i hope i learn from here.

U ddnt tell us how long d grated coconut can stay inside hot water to extract d milk, also do we use boiling water or it shld jst be hot; did I see ur fried chicken on white paper inside d plastic sieve, may I know y pls? Mrs AJ
I left the grated coconut in HOT, not boiling water, for 5 minutes.
The fried chicken is put on those white serviettes because of the vegetable oil. I wanted the serviettes to dry the oil before I serve.
Thanks Cynthia, I parboil my rice, but sometimes though. I especially do that parboiling thing with cap rice because it takes longer to cook.
I used tomato rice for this dish, it cooks faster and I didn't want my rice too soft so I washed with cold water, but changed water four times until I saw that the rice was clean.
There is nothing wrong with cold washing of rice. Wash well until rice is clean and you are good. Parboiling helps to reduce the starch in the rice, that's why I parboil sometimes.

Hi Eya, just stumbled across your blog and i'm already hooked, i love cooking and trying new recipes, i love coconut rice but grating was always a problem, tried using coconut mile one but i got only 1 can and it wasn't enough, not until last christmas i was to cook coconut rice for the whole family (extended) and i decided to try blending the coconut as i knew it will be really difficult to grate 7 coconuts alone, so i unshelled the coconuts, cut them in tiny bits and grated in batches and VOILA! It turned out like grated coconuts and i used less than an hour to do the grinding, since then, i've been making coconut rice a lot more and i've been passing on this new easy method to coconut rice lovers.

Nice meal there.jst wanna chip this in.I like to peel d brown back of d coconut before grating especially wen am goin to be cooking plain coconut rice garnished with green,yello,and red pepper to make a better presentation.Then I serve with a nice Sauce or Gravy.Wot do u think?

When I saw the way you made the bread crumbs I was blown away. Usually when I make Parmesan chicken for my kids I use the bread crumbs sold in stores. There are times I will want to make Parmesan chicken but am all out of bread crumbs. I have learned something new,making crumbs out of left over bread. Just love it……..thanks Eya

Shayor, you don't have to grate the coconut. Just cut the coconuts in small pieces, add water to it and blend. It comes out really nice. You can even use the shaft for coconut candy.

Made this dish for a party,along with jollof rice. Needless to say it dissapeared sharp sharp. Especially oyinbo liked it,despite the pepper in it (i kinda forgot to reduce that) So im definately gonna make it more frequently.

Just finished cooking this coconut rice and it was da bomb. The coated chicken however came out a bit too dark but for the 1st time, no biggie. If u live in Lagos around anthony village u can get bread crumbs in edichart, though I used my leftover. Will repeat this recipe but will dice some gizzard into the rice. Thank u
