Here is my bowl of cabbage cucumber salad served with my very own homemade salad cream. This can also be called cabbage and cucumber slaw.

Today, I’m going to show us how I make my cabbage cucumber salad to replace cole slaw  whenever there is a rice meal and we don’t feel like serving the usual coleslaw.

This cabbage and cucumbers salad can easily make one forget to remember their usual Naija coleslaw. The taste is just wow combined with the crunch of cabbage and the cucumbers.

We celebrated hubby’s birthday on Father’s day and because of the lockdown and my craze for adding greens to every meal, I decided that since we were serving jollof rice for the  small indoor lockdown birthday celebration, that coleslaw will not add the much-needed Greens so. I made this and thankfully remembered to take photos.

Cabbage and cucumber salad is the easiest salad you can think of. The ingredients are easy to come by and very affordable.

There were times I cooked rice and served with both cole slaw and this cucumber cabbage salad. You won’t believe the one my kids finish first. Everytime that I served cole slaw and cabbage cucumber salad, the kids rush this salad first before visiting the coleslaw while hubby won’t even try the cole slaw once he sees that both are on the dining table.

Well, for me, I prefer this, even though I love my coleslaw too.  The difference between the two isn’t much but, there is a crunch about this cabbage cucumber salad that just makes you want to eat more and more.

Because of my weight loss lifestyle, this salad is what I serve for dinner some days with some proteins. It is my little boys’ favourite.

For everytime that I serve the family cabbage and carrot salad for dinner, the kids loved it. I also eat without thinking much about counting  calories.

  • Cabbage
  • Cucumbers
  • Salt
  • Warm water
  • Salad cream

 

ITEMS YOU NEED TO MAKE THE SALAD

  1. A clean bowl
  2. Chopping board
  3. A sharp knife
  4. A strainer
  5. Food grater

 STEPS: How I make cabbage and  cucumber salad

  1. First I clean and wash my vegetables.
  2. After washing, I place the cabbage on a chopping board and start shredding using a sharp kitchen knife.
  3. After shredding the cabbage quantity that I need for that moment, I soak them in a bowl of salted warm water and leave for about 2 to 5 minutes to let the cabbage just get a bit wilted and to remove those cabbage smells. The salted warm water does a great job at that.
  4. While the cabbage is  in the warm water, I wash and chop the cucumbers to any  flat shapes I like.
  5. The next step is to squeeze or completely strain out the water from the cabbage and mix with pieces of cucumber before adding my homemade salad dressing.  For this particular cucumber shapes, I divide a cucumber diagonally into four parts without tearing them off  completely. Then place on a chopping board and cut like when we cut ugi leaf.
  6. If you would like to sprinkle some onion rings on your salad, now is the time to do so.
  7. Finally, I serve as a meal on it’s own with some boiled egg, fish or chicken, or serve as a side dish for rice, especially jollof rice.

For my weight  loss journey, I eat every food but with smaller portions. I forbid no food because this is a lifestyle that has to be sustained.  Eating smaller portions of every food works well for me. I lose weight, keep the weight off and still eat my favourites.

A small pprrion of this salad was enjoyed by yours truly after serving the kids.

You can skip the addition of salad dressing for now. Olive oil can also be used as dreaaing for this cabbage cucumber salad. I would advise that you use a very little quantity of any salad dressing you love. To help keep cravings in check.

This cabbage cucumber salad is a whole complete  weight loss meal when combined with some proteins like a boiled egg, chicken or fish.
