How to bake evaporated milk cake

Here is my Nigerian cake recipe with evaporated milk.  It’s delicious and buttery.  You can call it yellow butter cake of you like.

INGREDIENTS FOR NIGERIAN CAKE WITH EBAPORATED MILK

  • 3 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 and 1/2 sachet butter  baking margarine (375 grams)
  • 2 cups sugar
  • 8 eggs
  • 1 teaspoon vanilla essence mixed with pineapple essence
  • 1 can evaporated milk  (150 ml)

 

ITEMS  NEEDED TO BAKE NIGERIAN CAKE WITH MILK

  • A bowl
  • Sieve
  • Food processor or cake mixer
  • Measuring cups
  • Measuring spoons
  • A greased baking pan
  • An oven

STEPS TO BAKE

  • Measure the sieved flour, baking powder and salt into a bowl, mix well and set aside.
  • Mix the sugar and butter briefly with a spoon and a bowl before emptying into the food processor for a proper job.
  • Add the eggs, essences and milk to the food processor. Pulse and pulse until everything is well combined.
  • Now empty into a bowl and fold in the dry ingredients.
  • Once folded, pour into a greased baking pan and bake in a preheated oven for 45 minutes or till a toothpick inserted in the middle of the cake cones out clean.
  • Take out of the oven and cook in a rack before cutting.

 

For baking this Nigerian cake with evaporated milk, I preheated the oven for 25 minutes and baked for 40 minutes.

The cake is a bit burnt as shown in the video above but we  easily scraped off the little burnt area and enjoyed the delicious cake baked with evaporated milk.

The next time I use this cake recipe, I won’t wait for 40 minutes before checking.  Will probably insert a skewer at about 35 minutes baking time.

We baked this Nigerian cake today to celebrate children’s day and 8t did actually boost their moods as they just couldn’t wait to check and cut the cake for an indoor celebration.

May God protect all Nigerian children today as they celebrate their day at home because of COVID-19 pandemic. Amen.
