So, today we are going to learn how to use frozen flour for meat pie.
I have this frozen flour that has been in the freezer for about five months now. From November 2019 to today April 29th, 2020.
The city is on lockdown due to coronation pandemic and the kids want some homemade meat pies. We decided it’s time to get my frozen flour out of the freezer for some baking.
HOW TO USE FROZEN FLOUR FOR MEAT PIE MAKING
It was easy to use the frozen flour:
Firstly, I brought the flour out of the freezer and left to stand for about 30 minutes before using. I think that’s just all because with the hot weather in Nigeria, before 30 minutes, the coldness had reduced.
Secondly I worked with very warm water while mixing ingredients.
So. This delicious meat pies have just been baked. Coming out fresh from the kitchen looking nothing like we used frozen flour preserved in the freezer for five months.
I am trying to answer questions I think someone might ask. Even though this wasn’t meant to be a meat pie recipe post, I am forced to write down the simple recipe because this lovely meat pies taste really really good.
INGREDIENTS FOR FROZEN FLOUR MEAT PIE:
THE FILLING:
- 1 medium sized onion
- 3 small carrots
- 2 medium sized Irish potatoes
- 1/4 cup vegetable oil
- 4 beef seasoning cubes
- 1 small pack minced beef
- A pinch of thyme
STEPS TO MAKE THE FROZEN FLOUR MEAT PIE FILLING:
- Before you make the filling, first remember to wash and chop or dice the carrots and onion and set aside.
- Also wash, peel the skin and dice the potatoes into tiny cubes and set aside for later.
- Line the baking tray with foil to prevent easy burning in the oven.
- Keep a brush and fork or meat pie cutter close by.
Now everything is ready for later You can start stir frying…
- Stir fry the vegetables and meat with seasoning cubes till meat changes from red to pale.
- Check for taste, cover and let it simmer in low heat until meat tastes done in just a few minutes. I didn’t have any need for water because cooking in low heat enabled the beef juices to come out and do the cooking
- However, if your pot is getting too dry, feel free to add a little water and sprinkle in some flour to help it thicken. For mine there was no need for flour since we didn’t add extra water.
- Set the cooked filling aside head over to the frozen dough which would have sat out for a while now.
INGREDIENTS FOR THE DOUGH
- WE USED: THE FOLLOWING:
- 4 cups flour
- 1 and 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 sachet baking margarine (250 g)
- 2 raw eggs
- 140 mls warm water. You might need a bit more or less depending on how you measure your flour.
- 2 extra eggs to crack and set aside for sealing and brushing on the pies before baking.
HOW TO MIX FROZEN FLOUR DOUGH FOR THIS NIGERIAN BEEF PIE
- Sieve the flour and baking powder into a bowl.
- Add the salt and break the cooking margarine or butter into tiny pieces in the flour.
- With your fingers, rub and mix well until it looks like bread crumbs.
- Add the eggs and continue to mix with your fingers a little bit more till well mixed.
- Now start adding the warm water in little quantity while mixing. Continue until it can easily form a ball and feel like very well made pounded yam or r FLUFFY eba. Now it’s ready.
- Cut into 3 parts and make 3 smooth dough balls. Wrap them in cling film and drop in the freezer for about 20 minutes to make the dough more pliable and easy to flatten.
- After 20 minutes bring out the dough balls and flatten on a clean surface using a rolling pin.
- Get a meat pie cutter or round cup and cut the flattened dough into many circles.
- The baking is about to begin as you brush egg around the edges of the circles.
- Finally, you scoop some filling with a spoon onto the circles, close, press with a fork to seal.
- Place them on the tray and put them in the hot oven. Bake till brown and enjoy.
