This is how I make my creamy macaroni with coconut milk, crayfish and dried fish. Any type of pasta can be cooked this way and it will taste delicious. We have coconut spaghetti and macaroni already published here on the blog but this recipe is different. This coconut milk macaroni is cooked with chunks of dried fish in tomato sauce unlike the other recipe.
This is being made for kids so the pepper added is minimal. When I make coconut milk pasta for adults, we cook with lots of fresh pepper. Coconut milk macaroni cooked with dried fish and crayfish tastes better with lots of pepper. The spicier the better.
INGREDIENTS
Soya oil
Onion
pepper
Tomato paste
Coconut milk gotten from 1 large grated coconut. You can dilute 1 sachet coconut milk powder to use or 1 can coconut milk
Fish Stock or water
Roughly ground crayfish
1 sachet pasta (Macaroni)
Dried catfish
Seasoning cube
Salt to taste
Cooking Direction for coconut milk macaroni cooked with crayfish and dried fish
- First stir fry the onion, pepper and tomato till onion turns translucent.
- Add the coconut milk and stir, add the stock or water. check for taste, then bring in the crayfish and washed dried fish
- The seasoning cubes and salt can come in now. Check for salt before adding so you don’t sprinkle in too much salt. Cover the pot and leave to boil.
- Add the macaroni, ensure that stock covers the macaroni or you can add more stock. stir gently and cover to cook in low heat. Pasta cooks in about 10 t0 12 minutes, so check often and turn off the heat once it tastes cooked. You can make this creamy by cooking with more stock and not letting the pot dry or you cook with less stock (water) and let the pot dry completely like jollof macaroni.
