ABOKI NOODLES RECIPE FOR KIDS
Aboki indomie noodles is a street food in Nigeria sold by Hausa men who have this expertise of making fast food in minutes and selling alongside Nigerian tea (Hot chocolate drink). This method of cooking noodles is simple, easy and yet very nutritious because of the assorted vegetables added.
Another thing that makes this method of preparing noodles great is the fact that the noodles are first of all soaked in hot water and drained before cooking. That takes off the coating on noodles. and makes the meal healthy and very safe to feed even babies.
The stainless pot I used to cook won’t let the noodles come out like pancake or looking like pizza. If you have a non stick pot, use it. The result looks better when cooked in a non stick pot. While trying to scrape the delicious noodles from the frying pan, some got stuck at the bottom and I regretted not cooking in a non stick fry pan but for the taste, I love it.
To cook noodles with vegetables and eggs, for me right now, this aboki mallam method is preferable. Instead of making indomie noodles separately and boiling eggs in a different pot, we just whisked the eggs together with the parboiled noodles and vegetables and cooked at once. The combination of the eggs and vegetables gave a lovely taste.
2 small packs of noodles served 3 adults because the vegetables and eggs increase the size.
INGREDIENTS FOR ABOKI NOODLES RECIPE WITH VEGETABLES AND EGGS
- 2 small packs of indomie noodles
- 2 green peppers
- 1 red onion
- 1 medium sized tomato
- A handful shredded cabbage
- 1 small carrot
- 3 eggs
- 2 to 3 tablespoons vegetable oil
- Water
COOKING STEPS FOR STREET STYLE NOODLES
Before heating the oil, ensure that the vegetables are all washed and shred. Set them aside.
- Soak noodles in hot water for about 2 to 3 minutes.Mix the noodles plus seasoning with your eggs, whisk everything together with the shred vegetables.
- Pour into heated oil in a pot or frying pan and leave to cook for about a minute or till you feel the bottom is a bit brown. Now, you flip over and let the other side cook too. While it cooks, remember to press it down let it cook very well.
- Cut like pizza and serve your pizza or aboki noodles hot with some chill drinks.
