Today I’m sharing how to prepare beans and corn porridge with a simple recipe that anyone anywhere can use.
The easiest method to cook beans and corn porridge is this one shown in the video below.
WHY I BOIL MY BEANS AND CORN SEPARATELY
In the past, I boiled the beans and corn together, and even though sometimes they both cook to perfection, at other times, the beans cooks soft while the maize is still uncooked and needs more time.
Boiling beans and corn in one pot from scratch can be a bit risky if the corn is not like baby grains. When you buy corn from the market, sometimes you can’t tell if it’s very mature and hard to cook soft or easy to soften.
Many people have cooked this meal with the one-pot from scratch method and ended up chewing hard grains of corn in a pot of soft beans porridge.
The very first time I boiled them separately before adding to one pot was the time I got hooked to this method of making beans and corn porridge. With the beans boiling in a separate pot from the maize, once one softens, the heat is turned off while we wait for the other pot to also cook soft before bringing them together to continue cooking.
This method of beans and corn porridge is my best so far. There is no more anxiety over beans cooking while corn is still hard.
Why My beans and corn porridge is prepared without frying
I’m aware that this dish can be cooked with the onion and crayfish being fried in oil. However, after trying that method too, I pick the no-frying-method. That fried taste in beans and corn porridge is good but I prefer the taste without frying. And I also think that cooking without frying is healthier for the family.

INGREDIENTS: How to prepare beans and corn porridge
We used
- Beans
- Boiled corn
- Palm oil
- Onion
- Pepper
- Crayfish
- Seasoning cubes to taste
- Salt to your taste
- Water
Steps to make beans and corn porridge from scratch
- Boil beans and corn in separate pots until soft. I add onion to my beans before boiling as you can see in the video. Helps it cook faster.
- With a knife, remove the corn grains from the already boiled corn cobs as shown in the video above.
- Mix the corn and beans in a large pot and let both briefly boil together.
- Add all the ingredients and cover to simmer in low heat.
- After they boil, stir very well and check for salt and general taste of the food.
- If the pot is getting dry, you can add some more hot water and continue to cook and stir frequently to thicken. Stir until you are satisfied with the taste and thickness.
- Serve hot and enjoy with loved ones.
Fresh corn is in season right now and very affordable. When corn is not available I use some cans of sweet corn and skip the boiling part.
