Nigerian beans porridge recipe. There are different methods of cooking beans porridge in Nigeria. Different Nigerian tribes cook beans differently. Iam not Yoruba but my favourite method of cooking beans porridge is the Yoruba method. The porridge looks so soft and inviting, It looks so mashed you don’t even need to chew. I love it.

HOW TO PREPARE NIGERIAN BEANS PORRIDGE

There are three methods that I cook beans porridge, depending on what I want to serve the beans with.

INGREDIENTS TO COOK BEANS PORRIDGE IN NIGERIA

  • Beans
  • Onion
  • Water
  • Pepper
  • Salt
  • Seasoning cubes

The six ingredients listed above are the major beans porridge ingredients used in Nigeria. Sometimes, I add cow skin (Kpomo), fish and even vegetables. At other times, when I feel like it, I add tomatoes but these are all optional. To cook good beans porridge in Nigeria, all you need are six ingredients above. I have also added crayfish to beans porridge a few times and it tastes good.

FOR NORMAL NIGERIAN BEANS PORRIDGE

What I call normal beans porridge is the beans porridge used in drinking garri, served with bread, yam, plantain or just enjoyed as a main dish. Cooking this beans porridge in Nigeria, we just follow these steps:

  1. Wash beans and boil with enough water to completely cover the beans.
  2. Add just onion and nothing more until beans is soft.
  3. Then, you can add palm oil and cover to boil. The oil needs to cook and mix well with the beans.
  4. Once the boiling beans softens very well, we add pepper, salt, seasoning cubes, check for taste and stir very very well until the soft beans thickens.
  5. If you want it all mashed, use a potato masher and do the job.
  6. That is how to cook beans porridge in Nigeria. It’s so easy and doesn’t need many ingredients.

I have different methods of cooking beans porridge and will share them later. However, what is here is the general method to use for authentic Nigerian style beans porridge.

I love to get creative in the kitchen. There is a method where I boil the beans till soft, then fry crayfish, onion and peppers with seasoning before adding to the boiled beans. The mixture is allowed to boil well and mashed to delicious fried beans porridge.
