Can I Add Tomatoes To Ofada Stew?

Hello Aunty Eya. I saw an ofada stew recipe on your blog and wanted to try it. My husband is Yoruba, he thinks that Ofada sauce should not have anything to do with tomatoes.

I would like the taste of a little of that different taste but wondering if that might make it taste awful.

Please reply ma. Is it ok to add a bit tomatoes to ofada stew?

My reply is YES. Especially green unripe tomatoes. They are good in ofada stew. We can always tweak recipes to suit out taste buds and nutritional needs.

Dear poster, you can if you want even though we know that Ofada stew is mainly cooked with green peppers and bleached palm oil with generous amounts of fermented locust beans.

If you do not like bleached palm oil, you can make your  ofada stew without bleaching your oil. I have eaten ofada stew with the palm oil still red in many restaurants near me.

You can add tomatoes but do not let the tomatoes overpower your main ofada ingredients. That bleached oil, fried peppers and dadawa taste id what gives the unique ayamase taste. The little tomatoes can add some tweet taste but try your best not to add too many tomatoes if you want it to still be called ofada stew.

Some ofada stew recipes include green tomatoes if you can find them but you know green tomatoes don’t have that sweet tomato taste yet until they are ripe. If what you mean is green  (Unripe) Tomatoes, then you are still in line.

Who else thinks that tomatoes should never be added to ofada stew?
