Coconut Flavoured Nigerian Cake

My cakes are getting better and awesome and better. I love it! This coconut flavoured Nigerian cake tastes like there’s some coconut inside but no. Coconut and vanilla essence gave it that taste.

There are so many Nigerian cake recipes on this blog I shouldn’t even bother to write much here. Will just give the recipe I used and maybe links to the old Nigerian cake posts. We have good cakes baked with oven and cakes baked with no oven inside cooking pots.

The coconut flavor is what made the difference.

 

INGREDIENTS FOR COCONUT FLAVORED NIGERIAN CAKE

  1. 3 cups flour
  2. 2 teaspoons baking powder
  3. 1 cup sugar
  4. 1/4 teaspoon salt
  5. 1 sachet baking margarine or 250g butter
  6. 5 eggs
  7. 1/8 teaspoon vanilla essence
  8. 1/2 teaspoon coconut flavour

 

STEP BY STEP GUIDE TO THIS CAKE BAKING

Steps to bake coconut flavoured Nigerian cake.

  1. Beat sugar and sugar till a bit light.
  2. Gradually add the eggs one after the other while beating.
  3. Sieve together the baking flour, salt, baking powder and add gradually while gently folding in without beating.
  4. Once everything is well mixed, pour in a greased pan and bake in a preheated oven. My oven has no settings ‘old school’ so we heat it up for 15 to 20 minutes before cake baking begins.
  5. Bake for 25 minutes or till toothpick inserted in the middle of the cake comes out clean.
  6. Leave outside to cool a bit for like 10 minutes before removing cake from baking pan.
  7. After cake is cool, you can cut and enjoy.
